Jon's Elk Chili Recipe - Texas Two-Step And Texas Heat All-Purpose Seasoning

INGREDIENTS
5 lbs ground elk, buffalo, or beef
Bacon
Onions and garlic
Tomatoes, sauce, and paste
Fire‑roasted green chilies
Mixed beans
Cleve’s Texas Two‑Step or Texas Heat (spicy)
Guinness beer
Worcestershire and soy sauce
Jalapeños

INSTRUCTIONS
1. Cook bacon and reserve drippings.
2. Brown meat in drippings.
3. Add onions and garlic.
4. Stir in tomatoes, chilies, beans, and paste.
5. Season generously with Cleve’s.
6. Add beer and sauces.
7. Float jalapeños on top.
8. Simmer 2 to 3 hours.
