❓ We get this question a lot…..what is “hanging weight”

Other terms that may be used in the industry are:
*dressed/carcass weight
*hot carcass weight
*rail weight

As you can see by the photo why “hanging” is used. The carcass is literally hanging!

This is what you see after the first part of the process is done. Dispatch the animal, remove the hide, guts, organs, head, and the lower part of the legs. Once that is done a weight is taken and the carcass is moved into the temperature controlled cooler to dry age.

#️⃣ This is the number the butcher and I use to figure out what the customer owes

❗️Very important, this is NOT the take home packaged meat weight.
