Thanksgiving Turkey tamales have been great this year. I roasted a tender fowl with no additives. Am making more tonight. Love the cranberries mixed in with the turkey filling and wrapped in sage-seasoned masa.
Have plenty of spicy choices for those who can take the heat. Thanks to my neighbor, Jan Elliott who shared her garden peppers with me. Whew!! Some of these are really hot. Great to burn out a winter cold.
This week I am doing more turkey, pork loin, roast chicken, and mole poblano chicken.
Have finished batches of Spinach/Feta, Bean/Cheese, Spicy or regular Chili Beef, Spicy Pork, Spicy Chicken, Mild Chicken/Cheese, and Mole' (sauce of Ancho peppers, sesame, pumpkin seeds, and cocoa).

Yipee! Finally got propane to steam tamales for TRF 4th wkend. They had to replace the entire outside tank this afternoon. Better get those orders in the pot!

Ok, meat lovers, have pork, chicken, chili beef, and mole' chicken coming up for this weekend. Delivery on Tex. Ren. Festival site for participates or campground for patrons @ $24 doz. Arrange for take out/pick up on Renfaire Drive @ $18/doz, with homemake salsa verde-$20.

Prepping up chicken for tamales today in slow cooker. Yum...the aroma will fill the house and inspire late night tamale time.

Notice the name change. My faire name is still Schatzie, but I thought the tamale business could go w/location since it is on Renfaire Drive in what is know to locals as, "Toon Town" and as we are mainly Ren folk, the e on the end protects me from any Roger Rabbit infringement.

The "squawkers" are going well! I make them with slow cooked natural chicken and Serrano peppers. Am thinking of calling the Serrano/pork ones "squealers" but it might sound too sissy. What do you think?
