Time for a quick recipe because it’s summer, it’s hot, and y’all don’t have time for complicated recipes over a stove right now. I know I don’t.
And I also don’t have time to be bothered taking photos or videos while I cook. So this simple grid post will have to suffice so we can get back to our regularly scheduled summer programming. Okay, here we go, my favorite summer salad.

PEACH, ARUGULA, & MOZZARELLA
It’s so quick. It’s so simple. The flavors are delightful and fresh and summery and sweet. The peaches are really the star of the salad and the greens act as a secondary flavor. Mozzarella because, yum. And while I love this salad with some beautiful prosciutto on top, that’s just not readily available on my homestead. So we had some nice, thin ham slices which I dehydrated for a couple hours so the salad wouldn’t feel too slimy. Arugula is the perfect, peppery green to pair with such a sweet salad. Lightly drizzled with a good, tangy (not too sweet) balsamic vinaigrette and voila.

So many amazing fresh ingredients this time of year. No need to overdo it. Fresh and simple is key.
Oh and on this plate I ate it with the most amazing tomato toast. Nom nom
