Chelsey's Gourmet Pastured Eggs Hi, I’m Chelsey — farmer, mom, and founder of Chelsey’s Eggs. We’re a Kentucky family farm raising pasture-raised hens on perennial pastures and non-GMO feed.

Meet the newest members of the flock! 🤎💙

Yesterday we welcomed a new group of 17-week-old Hy-Line Browns and Azur hens to the farm. They’ll spend a few days getting comfortable in the barn before heading out to forage our pastures. We expect to start getting a few very, very small eggs from these girls in the next few weeks. So if you see a slightly smaller egg in the carton, it came from this flock!

Our Hy-Line Browns are known for being dependable layers of beautiful rich brown eggs, while our Azur hens lay naturally blue eggs that add a little extra color to every carton. Together, they make up the colorful dozen we’re proud to offer.

A fun piece of history: these pullets came from the same grower in West Virginia who also supplied hens to my grandpa’s farm in western Maryland many years ago. I love that a small part of our family’s story continues with every new flock.

We’re excited to watch these girls settle in!🥚🌿

One of my favorite times of day on the farm.

As the evening cools off, the hens spread out across the pasture and get busy scratching, pecking, and foraging. Watching them do what chickens were made to do never gets old.

Not only is it good for the hens, but they’re helping the pasture too—spreading nutrients, eating insects, and working them into the soil as they scratch around.

It’s a pretty simple system, but one that’s worked well for us here just east of Louisville for a long time. 🐔🌱

Okay, so here we go again!

WHERE TO FIND CHELSEY’S EGGS • PART 3 🥚

This one takes me back a little.

Rainbow Blossom was one of the first grocery stores I ever walked into and pitched our eggs to as a kid. Seeing Chelsey’s Eggs on their shelves all these years later is something I don’t take for granted.

Since then, Rainbow Blossom has continued growing while staying true to what makes them special — a locally focused market filled with natural foods, community connection, and an incredible assortment of locally produced products.

We’re proud to be among the many Kentucky farms and makers they support.

Find Chelsey’s Eggs at Rainbow Blossom locations across Louisville!

WHERE TO FIND CHELSEY’S EGGS • PART 2 🥚

Continuing the series on where you can find Chelsey’s Eggs… today we’re highlighting another longtime retail partner — Paul’s Fruit Market in Louisville.

Paul’s has supported local farms and Kentucky food producers for many years, and we’re grateful Chelsey’s Eggs have been part of their shelves for a long time.

You can find our pasture-raised eggs at Paul’s locations across Louisville — right alongside fresh produce, local foods, and a business that truly values community.

If you shop at Paul’s, thank you for supporting not only our farm, but local businesses that choose to support Kentucky agriculture. 💛

Blue eggs, brown eggs… and a little behind-the-scenes from egg processing. 🥚✨

The eggs rolling across the light are going through our candling process.

Candling lets us look inside each egg by shining light through the shell to help spot things we don’t want to pack — cracks, shell defects, or abnormalities that aren’t always visible from the outside.

The blue eggs you see come from our Azur hens. The brown eggs come from our Hyline Browns.

We love mixing the blue eggs into cartons — they always catch people’s attention — but one of the questions I hear most is, “Are the blue eggs different?”

The short answer: the color comes from the hen. The bigger difference comes from the care, feed, and environment the hens live in.

Different breeds. Different shell colors. Same pasture, same care, same process.

From gathering eggs in the hen house… to candling, washing, cooling, and packing here on the farm — every egg goes through multiple quality checks before it reaches your kitchen.

And yes… we still think those blue eggs are pretty fun. 💙🤎🐔
