Hey Scrapple fans - it's been a while since we've given any updates on the business and products, but we've got great news!
After a pause of several months, Bush Lane Farms will be running at full speed, thanks to the partnership with renowned local chef Devon Rosenblatt. He was a fan of the product first, now he is a partner with BLF. He will be working to get product on shelves and on menus around Louisville. Look for more information to come out soon!

We'll be set up at the Lagrange Farmers Market Saturday mornings from now until October, and we will be cooking/giving out samples! Stop by and say hello, and check out the outstanding vendors at the market.
If you're not close by, remember that we can ship product anywhere in the US. In spite of what many retailers tell you, there is no such thing as "free" shipping. We don't make much (ok, next to nothing) on these sales but we're happy to move product and get it on peoples plates. We really do just pass on the cost of shipping, and throw in a free cooler! Growing up my dad would sometimes bring a brick of scrapple (more on what exactly scrapple is below) home, wrapped in butcher paper. At the time I didn’t know what was in it, but I loved it. LOVED IT. Fast forward to around 2007 - I decided I wanted to make my own scrapple. Internet searches didn’t come up with many “healthy” versions - recipes called for many scrap ingredients. So I started with pork loin. This began many years of experimentation, with different meats, as well as with different ingredients and formulations. All the while, family and friends couldn’t get enough of my Kentucky Scrapple. In 2018, I came to a crossroads in my career and decided that if I was ever to devote myself to making the best Kentucky Scrapple full time, this was it.
I knew how to make KY Scrapple, but what I didn’t know was the level of government involvement in the Scrapple manufacturing business. Starting a food (especially meat) manufacturing business from scratch and getting the necessary approvals and certifications is no small feat! In any case it took several months before I was able to begin production and sales, but as of April 2019 Bush Lane Farms was up, running, cooking and selling.
One of the real challenges of this venture is that there are two types of people out there: The kind who have never heard of Scrapple, and the kind who HAVE heard of Scrapple and have an opinion on it, usually very strong, one way or another. It truly is an education process getting people to accept that the basic form of Scrapple has been around for hundreds of years going back to Pan Hass in Germany. When hogs were butchered, the head and other scraps were boiled, the meat then chopped an returned to the broth, and cornmeal and flour added. This thick mixture would be placed in loaf pans and allowed to set up. Then it was ready to be sliced and fried.
KY Scrapple is a new concept that takes the best of traditional Scrapple and combines those flavors and textures with healthy, locally sourced ingredients. Nothing but ground pork, Weisenberger grits and corn meal, oats and spices. No scraps, organ meat or other junk, and no preservatives or fillers.
People in Northern Kentucky are probably familiar with goetta - it’s from the same family as Scrapple. It’s usually made with beef, pork, and pin oats, although many versions will incorporate some type of organ meat or skins. Some varieties are very good, others not so much. When asked about whether Kentucky Scrapple is similar to goetta, I use a line my youngest daughter came up with - “It’s like goetta, but boetta”.
One thing I know for sure - once people try Bush Lane Farms Kentucky Scrapple the vast majority really like it, and a good number buy it. In fact, during farmers markets I’ve had many folks from “back east” who are familiar with traditional Scrapple tell me that they much prefer KY Scrapple. The same is true for goetta fans. It’s lighter texture and appearance and quality ingredients have added fans of both traditional scrapple and goetta to the list of KY Scrapple fans.
