There's a lot going with my husband running for county judge, but we still have to get ready for Spring. Time to start seeding tomatoes, peppers & eggplants. Starting early pays off with these springtime favorites!

When seeding out your own transplants, make your own mini green house by covering the tray with saran wrap. When you see the first seeds sprouting, remove the wrap and keep your grow lights 4-6 inches off seedlings.

On top of hosting Thanksgiving this week, getting a tree at Lee County Christmas Tree Farm, hanging lights & decorating, we also found time to butcher chickens, can 42 quarts of apple cider, pick almost 20 pounds of peppers to donate to the AMEN Food pantry, and harvest peanuts.

We plant peanuts around the perimeter of our garden to keep Bermuda grass out. Peanuts have a type of fungus that grows on their roots that Bermuda grass doesn't like. And the best part is - at the end of the season, we get to harvest them!

While our family still consumes a majority of what we produce, we've been really happy to share the rest with the AMEN food pantry here in La Grange.
