I have an unhealthy relationship with Triberry bagels. 😂
They’re only available Tuesday, Thursday, Saturday and sometimes Sunday… which is very inconvenient for someone this committed. 🤣 So yes, I stock up.
Apparently I treat bagels the same way we treat empanadas.
During food-truck season, we usually keep 500–600 empanadas on standby. It sounds crazy until you realize we can sell around 300 at a regular event. We LOVE saying, “We don’t run out.”
Well… our last event almost humbled us.Pocatello-Chubbuck Chamber of Commerce hint hint!! 😉we love you guys! 💖
We came ridiculously close to selling EVERY empanada we had.
With only about half a dozen events left, I’m using this long weekend to spend Friday, Saturday , Sunday and Monday in my happy place: the kitchen, rebuilding our empanada emergency fund. 😂
People sometimes ask why we do all this. We both have full-time jobs, kids, sports, music, family and community commitments… but I genuinely love this. Cooking for people is one of my love languages. We really care about you.
And when you stop at the truck and Nick asks how your day is going, he really cares.
He may also immediately start explaining:
“I PROMISE these empanadas are not from Costco. My wife is Venezuelan!”
Apparently he appointed himself Director of Empanada Authenticity. Sir, they believe you.
When you take a bite, just know there were hours in the kitchen, tired feet, laughter and a whole lot of love behind it.
And today I’m giving some love back to another local business. ❤️
5th Street Bagelry in Chubbuck , thank you for feeding my Triberry addiction, for THAT cream cheese (yes, I keep my Lactaid nearby 😂), and especially for having employees who are always welcoming, funny and wonderful.
Owning a small business makes you see the work behind other small businesses differently.
So today, go give some love to a local business.
And Fifth Street… please save me a Triberry.
I have six events left and need emotional support. 😂❤️
