We are thrilled to announce this 2 day workshop with . Learn to transform milk into delicious kefir and yogurt while gaining familiarity and deep knowledge of dairy and its miraculous transformation. Trevor is a world renowned student (and now author!) of Milk Fermentation and all the beautiful nomadic and pastoral communities that revolve around it. Happy Birthday to our dearest Maggie Beth! Maggie was born and raised here in West Marin and embodies the spirt of this beautiful place in so many ways. She is a brilliant and passionate person who loves food more than anyone I’ve ever met. For those of you that are just here for the kraut, I want you to know that Maggie’s values and distinction of flavor have made this business what it is. When we first started wholesaling sauerkraut the big retailers and distributors were all pressuring us to lower prices by cutting corners, packaging in plastic, fermenting for shorter time periods, using non-organic produce, etc. Some of us were tempted as we struggled to get out of the red. Maggie refused, she said she’d rather quit the whole thing than buy pallets of plastic packaging that end up in the ocean. This ethos has carried through to our shop and now cafe, and it turns out it’s good not just for the people and planet involved but for business too. We are unique because we only offer high quality products, you can buy the low quality crap anywhere. However, if you want something of quality to eat we got you covered, thanks to Maggie!
