Koster Farms Update:

This week we have something new for you- Bacon Crunch Salad! Of course it has crispy pieces of fried bacon on top of our hydroponic lettuce, along with a little red onion. The crunch comes from a delightful mixture of sliced almonds, chow mein noodles, and sesame seeds, all toasted to a perfect light brown. (We'll put these in a separate cup to keep them crunchy). The dressing is the ideal compliment- avocado oil, sugar, white wine vinegar, salt, and pepper. Price: $11

Also on the menu this week are your usual favorites ($14 each):

Chicken Cobb Salad: lettuce, chicken breast, bacon, tomatoes, hard-boiled eggs, feta, chives. Dressing: olive oil, red wine vinegar, honey, garlic, parsley.

Vegetarian Taco Salad: lettuce, black beans, rice, roasted sweet potatoes, corn, tomatoes, cheddar cheese. Dressing: olive oil, fresh lime juice, cilantro, cumin, Dijon mustard, salt.

Chef Salad:
Lettuce, ham, turkey, Monterey jack and cheddar cheeses, hard-boiled eggs, tomatoes. Ranch dressing: mayonnaise, sour cream, buttermilk, cider vinegar, fresh dill, parsley, and chives, garlic and onion powder, salt, pepper.

That's it for our salads! Please order by Tuesday evening.

Every week we have lots of people wanting our spinach. Since we have trouble keeping up with the demand, I'm going to put in an encouraging word in for our kale- I've had oodles of people tell me they don't like kale, and I used to be one of them! Our kale is quite different from the store; the leaves are smaller and much more tender, and cook down very nicely. I want to share a very easy recipe for cooked kale (makes one serving):
Saute one minced garlic clove in a little oil. Add 2 tablespoons of beef broth and 2 cups chopped kale. Stir to moisten, then cover and steam a minute or two until leaves are tender. The beef broth and garlic give this great flavor! (Tip: freeze extra beef broth in ice cube trays- one cube = 2T.) Enjoy!

Happy “where is the water coming from this time” Sunday!! We are adding more tables and getting ready for the inevitable pepper/tomato boom. Hopefully this house and the mowers can give us a break to get out and harvest!

We fixed our drain pipe to the upstairs shower last month (or so we thought) only to discover another nail through the drain pipe today from the previous remodel. Time to replace the whole pipe. Sure glad we didn’t replace the ceiling yet! 😀
