May Garden Soup
What we’re eating around here these days…
On rainy May days we like to make a chicken noodle soup with all the young Spring veggie thinnings! You can really put whatever you like in there, but at least put carrots, onions and parsley in a fresh chicken stock with noodles to feel like you’re eating Spring in a bowl. Serve with bread and butter and a fresh Rocklands white.
Method:
1. Boil Chicken backs (sold at Rocklands) to make a broth.
2. Chop and sauté young veg like green garlic, green onions, carrots etc.. (leave out tender greens and herbs and add at the end)
3. Boil some spaghetti separately and set aside
4. Take out chicken backs and pick meat off if desired.
5. Add sautéed veg, greens, herbs and noodles, simmer, salt and pepper to taste and enjoy.
