While failure has been incredible teacher, the basic goal to operate a permaculture based farm is being realized and appreciated by more chefs

and the increasing number of customers I meet at farmers markets. About the farm: White Sand Homestead is a permaculture farm on rolling green, verdant hills in Poplarville, MS. We provide New Orleans' top restaurants with exceptional grass-fed and finished beef, pork, and lamb, along with eggs from pastured ducks and chickens. I manage the farm and at White Sand Homestead, responsible, humane practices, focusing on improved soil and animal health is our priority. Through my stewardship, the farmโ€™s pecan orchard is beginning to rejuvenate and is contributing to the animals' diet and rich soil. New Orleans and Slidell consumers can purchase White Sand Homesteadโ€™s offerings at the Crescent City Farmers Market in New Orleans on Tuesdays and Sundays, and at the Camellia City Farmers Market in Slidell on Saturdays. These ribs are farm-raised and fall-off-the-bone ready.

We love seeing what our customers do with pasture-raised pork. Getting to raise the animal, know its story, and watch it become a meal that brings people together โ€” that's exactly why we do this.

One of our customers brought these ribs to picture-perfect perfection for his family, and the results speak for themselves. He is part of a team that competes in barbecue competitions to raise funds for pediatric brain cancer research, and they cook award-winning food in that effort.

We're proud to be part of that table. I appreciate his steadfast commitment to culinary perfection and making the world a better place.

Congrats to Emeril's on taking the #20 spot in North America's 50 Best Restaurants! ๐ŸŽ‰

We're proud to be part of the journey. The quail on their menu come from right here at White Sand Homestead โ€” and we don't cut corners. We built this flight pen (pictured) specifically for them, because our mandate is simple: mimic a natural life as closely as possible.

Our birds forage on a mix of plants we grow just for them, supplemented with non-GMO feed. Real space. Real movement. Real food. That's the difference you taste on the plate.

From our pasture to one of New Orleans' finest tables.

Gautreau's is serving a Braised Lamb Caramelle with Carrot-Sherry Vinegar Sauce, Mascarpone, and English peas โ€” built on our grass-fed lamb.

I drove that delivery in myself, and seeing what their kitchen did with it is the kind of thing that makes the market days worth it.
Our lambs are raised entirely on pasture here in Poplarville.

๐ŸšซNo grain-finishing to rush them along.

Just grass, time, and good soil. When you raise an animal that way, you don't have to hide the flavor behind a heavy sauce. A great chef can let it speak, and that's exactly what Gautreau's did here: the sherry vinegar and sweet carrot lift the lamb instead of burying it, and the peas and mascarpone keep it bright.

This is what we mean when we talk about farm-to-table โ€” not a slogan, but an actual chain of people who care, from the field to the plate.
