We are just a few short months away from harvesting this year's fresh pecans.

🌳 Pecan Cycle 🌳

Winter Dormancy Rest period: From December through February trees drop all their leaves and go dormant to conserve energy during the colder months.

Spring Budding and Flowering Leaf-out: Buds begin to swell and new leaves emerge between around late March and early April.

Summer Nut Growth and Shell Hardening: During June through August the fertilized nuts grow rapidly in size and length through the early summer. Inside the green husk, the soft kernel begins to form and fill out by late summer.

Fall Maturation and Harvest Husk split: Cooler temperatures signal the green outer husks (shucks) to dry, split open, and release the mature nuts. This is when pecans are often harvested.

Did you know there are 2 main types of pralines?

1. French pralines, are a firm combination of almonds or hazelnuts, and caramelized sugar.
2. American pralines, are a soft, creamy combination of syrup and pecans, hazelnuts or almonds with milk or cream, resembling fudge.

We obviously prefer pecans. What’s your preference?
