Over the weekend, we treated ourselves to a brunch style pizza for dinner. Our neighbor, T's BBQ & Blues gave us some of his house made chorizo, and we knew exactly what to do with it. A deep dish pan pizza made at home in a cast iron skillet topped with chorizo, roasted potatoes, homemade green salsa, and cotija cheese.

Be sure to check out T’s business. He smokes cheeses, briskets, and I’ve heard phenomenal things about his beans.

The idea behind the Ragu thin crust was simple.

Cody wanted to use his pork shoulder ragu, which he also uses for the lasagna. A traditional lasagna is layered with dollops of ragu and béchamel. He decided to use both ragu and alfredo for an intensely flavorful thin crust pizza.
