Louisiana residents, better known as Cajuns, have a great love for cracklins, which are a big part of our culture. Surprisingly, however, very few know how the process of cooking cracklins is done. The majority of those who are familiar with cracklin cooking only know the modern, commercial version, which is basically just the act of frying them like french fries. This is why the original way, the
way in which our ancestors cooked cracklins, is almost a lost form of art compared to the way that the current generation takes on this task. The old way of cooking cracklins requires time and patience, something that Speedy is known famously for and two aspects of cooking cracklins that he would like to reintroduce. About ten years ago, Speedy wanted to participate in the Port Barre Cracklin Festival. Therefore, he asked his friend, Tweety, to be his cooking partner. Both Speedy and Tweety are very competitive in everything that they do, so you can about imagine their insistence on being successful. For the first couple of years, Speedy learned how to cook cracklins in that old fashion manner. Tweety's father-in-law and his father-in-law's close friend taught Speedy how to cook cracklins the way their ancestors used to do it. Over the years, Speedy and Tweety have developed a cracklin cooking process that incorporates that old school style, but with their own modern spin. The design of Speedy and Tweety's 3 Cajun's Cracklins logo, which can be found on the labels of their cracklins, was created in hopes of showing their appreciation for the two gentlemen who took the time to teach Speedy a part of our Cajun heritage. As you can see, the logo symbolizes the two teachers and the student learning . These men will always be a big part of the foundation of Speedy and Tweety's cracklin cooking journey. Speedy and Tweety's 3 Cajun's Cracklins specializes in one thing, which is "award winning cracklins." Our cracklins are cooked the old school, kettle style with a new, modern twist on the technique. To finish them off, they are splashed with a secret blend of seasonings and spices that create a tender, crispy cracklin with a unique flavor that is second to none! When he was growing up, Speedy's father would always tell him that practice makes perfect, which is why Speedy and Tweety are always practicing- to make the perfect cracklin!
