Our team had an amazing time celebrating Texas oysters alongside so many talented chefs. Big thank you to Aaron Juvera Southerleigh Fine Food & Brewing, Chef Jonathan Garcia Captain’s Cove Oyster Bar Adam Cavazos Bodega Tavern & Kitchen for the incredible partnership.

Teamwork made the dream work! We also appreciated the opportunity to transport all of the oyster shells from the event to be recycled by Sink Your Shucks™️ Oyster Recycling Program.

Big thanks to Daniel | The Seafood Dude for organizing such a fun event, and Captain’s Cove Oyster Bar for being excellent hosts. We are looking forward to the next one.

We have NORAS for sale R6 and R8 sizes ONLY!
Nora seed is a selectively bred diploid oyster by Center of Marine Aquaculture. They are bred for specific shell shape, meat yield, and survivability for the north gulf region.
They measure every aspect of the oyster that is chosen for the gene pool! Once selected they use a breeding model that determines which pairing would be best and then they breed that pairing!

Today is National Oyster Day…. August 5th. Right in the middle of the months you heard not to eat oysters in. Kind of makes you wonder, doesn’t it?

The truth is, that rule is older than refrigeration. It made sense before cold chain technology existed. Cultivated farms follow strict time and temperature controls, all year, no matter the calendar.

Texas summers push cultivated oysters into strict time and temp controls: refrigeration within 1 hour of harvest, cooled below 50° within 6.

1:14 PM — first cage pulled
1:30 PM — last cage pulled
1:53 PM — full load iced and refrigerated
1:54 PM — cooler doors closed

That’s the standard.

The only rule you should follow is buying from a farm that takes cold chain seriously.

This last month has been incredibly busy, but jam-packed with love. 💗We have been so lucky in this process to have met some wonderful people who share our love of oysters and passion for the environment. Just feeling grateful. Grateful for friends. Grateful for family. Grateful for our team. Grateful for our partners. And just can’t wait to keep kicking ass and serving some kick-ass oysters 🦪
