In the US, commercially sold beef must pass USDA inspection, which is mandatory. This inspection ensures the meat is free of disease, safe for consumption, and correctly labeled.

Grading, on the other hand, is voluntary, indicates the quality and yield. Grading gives the consumer an idea of what to expect in terms of juiciness, tenderness, and flavor. All our beef will come with a detailed yield report that will grade the beef. In addition, all of our steers have been DNA tested to prove their genetics. Anyone can list their beef as “wagyu” but without a yield report do you really know what you’re buying?

Do you know what you’re buying?

The picture on the right is farm fresh beef. The picture on the left is beef sold at a chain supermarket. Immediately, you will notice a difference in color but the differences do not stop there. The picture on the left is pumped full of additives and preservatives such as propl gallate, BHA, and BHT to extend shelf life and prevent spoiling. There is no telling how many cows and scraps were used in the package on the left. You read that correctly. The meat sold commercially at chain supermarkets is never from just one cow. The picture on the right is from one cow, locally farm raised, with more nutrients and natural flavor. Buy from a local farmer.

Akaushi influenced cattle have superior carcass traits and marbling. Genetics is often over looked or only allowed to play a minimal roll in the process of buying beef. Many people just buy the cheapest animal they can. Quality genetics is the first crucial step to creating quality beef. Starting with inferior genetics is setting up your farm raised beef for failure.

The price of beef.

Consider this, buying the cow, maintaining the land/fences/tractor/waterlines, and planting/fertilizing/maintaining forage grass. Plus, feeding when it’s hot outside, feeding when it’s cold outside, feeding when you’re sick, because these animals need to be fed, watered, counted, and cared for every single day. In addition, being available when heifers calve for the first time and have trouble. Finally, keeping the animal healthy until you can send it to the processor. These are the costs of real work, real care, and real people. Support your local farmers.

For your convenience, we offer two locations to pick up the meat depending on which one you are closest to. On our website, in the store where you put down a deposit, there is a drop-down arrow and you can pick either the processor in Fort McCoy or you can pick our family farm in Port St Lucie.
