Cooking oils. Seed oils are out. Animal fats are in.
On the shelf daily we have duck fat, wagyu tallow, bison tallow, and grass fed ghee. We also produce our own in house rendered beef tallow with the tallow trim from our ribeyes.
Ghee? What’s that? Butter, but clarified butter, so no milk solids. It is shelf stable and a great butter substitute.
When we render our own in-house tallow, we render/filter 3 times, then we toss the left over material from the render in the trash bin, where it belongs.
