In loving memory of our co-founder, Matthew Choi, this will be our third year partnering with Portland Farmers Market to uplift local farmers and business owners through the Matthew Choi Farmers Vendor Grant.

This grant offers $1,500 to help a new food or farm business join Portland-area farmers markets—a community deeply rooted in our story as Choi’s Kimchi.

We’re ringing in the New Year with some “swicy” (sweet/spicy) news! 2024 is off to a hot start!

Choi’s Kimchi is excited to announce we are partnering again with Shake Shack on their sweet and spicy Gochujang-glazed chicken sandwich – topped with a white kimchi slaw using an exclusive blend of our White Napa Kimchi! The sandwich is featured in Shake Shack’s new limited time “swicy” menu officially debuting January 12, 2024.

What makes this partnership so special to us is this was Matt’s last project before his sudden passing. Matt and his mom worked closely with Shake Shack’s culinary team to create a custom blend of White Napa kimchi to pair perfectly with their new gochujang chicken sandwich. Debuting in early 2021, the sandwich was a hit and a sweet tribute to Matt's legacy and the efforts of our heartbroken but dedicated family and staff. Now in 2024, we’re still hard at work and honored to partner with Shake Shack again!

And what’s even better - with 3 Oregon locations now open – enjoying the sandwich is so much easier! Try it for a limited time only!
