Banana Bread

Ingredients
Cooking spray
1 1/2 c. (180 g.) all-purpose flour
1 tsp. baking soda
1/2 tsp. kosher salt
2 large eggs
3/4 c. (150 g.) dark brown sugar
6 tbsp. unsalted butter, melted, cooled
2 c. (460 g.) mashed ripe bananas (from about 4 large)
2 tsp. pure vanilla extract

Directions

Step 1
Place a rack in center of oven; preheat to 350°. Grease an 8 1/2" x 4 1/2" metal loaf pan with cooking spray and line with parchment, leaving an overhang on both long sides. In a medium bowl, whisk flour, baking soda, and salt until combined.
Step 2
In a large bowl, whisk eggs, brown sugar, and butter until smooth. Add bananas and vanilla and whisk until well combined (batter will be slightly lumpy). Fold in dry ingredients until incorporated.
Step 3
Pour batter into prepared pan; smooth top with a rubber spatula.
Step 4
Bake bread until risen, golden brown on top, and a tester inserted into the center comes out with a few moist crumbs attached, 50 to 60 minutes.
Step 5
Let cool in pan at room temperature at least 1 hour. Using parchment overhang, lift bread out of pan and slice.

Bagel Focaccia

Ingredients
FOR FOCACCIA:
2 c. (454g) warm water (100°-110° F)
2 tsp. active dry yeast
1 tsp. granulated sugar
4 c. (480g) unbleached bread flour
1/4 c. plus 1 tablespoon extra-virgin olive oil, divided, plus more for hands
2 tsp. kosher salt
4 tbsp. everything seasoning, divided
Flaky sea salt
FOR ROAST GARLIC CREAM CHEESE:
1 head garlic
1 tsp. olive oil
4 oz. cream cheese, softened
Kosher salt
TO SERVE:
Thinly sliced red onion
Capers
Freshly cracked black pepper

Step 1
In a large bowl, combine water, yeast, and sugar. Whisk until dissolved and let sit until yeast foams, 5 minutes.
Step 2
Add 2 cups flour to bowl and whisk for 2 minutes, until completely smooth and the texture of pancake batter. Add remaining flour and salt, and stir vigorously with a wooden spoon for about 2 minutes, until all flour is incorporated and dough begins to pull away from the sides of the bowl as you stir. Cover bowl with plastic wrap or a clean kitchen towel and let rise until doubled in size, 30 to 40 minutes. (An off oven or microwave is a great place to proof dough!) Alternatively: refrigerate dough overnight to develop flavor. When ready to bake, remove bowl 2 hours in advance and let stand, covered, in a warm place before proceeding to next step.
Step 3
Preheat oven to 500° and add 1 tablespoon oil to a metal 9”-x-13” baking pan. Use your fingers to coat all edges of the pan with oil, then sprinkle 2 tablespoons everything seasoning in an even layer at the bottom of your baking dish. Cut the top off head of garlic, leaving the root intact. Place on a square of aluminum foil, drizzle with teaspoon oil, and wrap completely in foil.
Step 4
When dough has doubled in size, carefully transfer your dough to prepared baking sheet, using a rubber spatula to detach dough from bowl. (The dough will be very wet. Avoid touching it at this point, as it is extremely sticky.)
Step 5
Drizzle remaining ¼ cup olive oil all over dough, then oil your hands. Plunge the tips of your fingers into the dough, all the way to the bottom of the pan, and drag outward to stretch dough to edges of the pan, creating small dimples all over. Sprinkle remaining everything seasoning over dough and top with a generous sprinkling of flaky sea salt.
Step 6
Place focaccia and wrapped garlic head in oven and reduce temperature to 450°. Bake until bread is golden and garlic is tender, 20 to 25 minutes. Let focaccia cool at least 10 minutes before slicing.
Step 7
For garlic cream cheese: in a medium bowl, combine cream cheese and all roasted garlic cloves. Season with salt and mash with a fork until smooth.

Co**ha Bread

Ingredients
DOUGH
2/3 c. whole milk
1 (1/4-oz.) packet active dry yeast (2 1/4 tsp.)
1/4 c. plus 1 tsp. granulated sugar
4 to 4 1/2 c. all-purpose flour
2 tsp. kosher salt
4 large eggs, lightly beaten
1/2 c. (1 stick) unsalted butter, cut into 16 pieces, room temperature, plus more for bowl
TOPPING AND ASSEMBLY
1 c. all-purpose flour, plus more for assembly
1 c. powdered sugar
3/4 c. vegetable shortening
2 tbsp. unsweetened cocoa powder (optional)
2 tsp. pure vanilla extract
Pinch of kosher salt

DOUGH
Step 1
In a small pot over medium heat, gently warm milk until warm, about 1 minute. (It should feel warm to the touch but not hot, about 105°.) Transfer to a liquid measuring cup and stir in yeast and 1 tsp. granulated sugar. Set aside until foamy, about 5 minutes.
Step 2
In the large bowl of a stand mixer, whisk 4 cups flour, salt, and remaining 1/4 cup granulated sugar.
Step 3
Once milk mixture is foamy, add to flour mixture along with eggs. Using a rubber spatula or wooden spoon, stir until a shaggy dough forms. Attach bowl to stand mixer and fit with dough hook. Mix on medium-low speed, adding more flour 1 tablespoon at a time if dough remains stuck to bottom of bowl, until smooth and elastic but pretty stiff, 10 to 12 minutes.
Step 4
With motor running, add butter one piece at a time, mixing until fully incorporated before adding the next (dough might look like it breaks apart into smaller pieces before coming back together). Using rubber spatula, scrape down any excess butter if it accumulates on sides of bowl. Once butter is incorporated, dough should be smooth and supple. (This could take up to 10 minutes more.)
Step 5
Brush a medium bowl with softened butter. Transfer dough to a clean work surface and gently pat to a square-ish shape. Gather corners of dough toward center and press gently to help corners adhere to one another. Turn dough over and gently roll across work surface in a circular shape to help tighten seal. Transfer to prepared bowl and tightly cover with plastic wrap. Place bowl in a draft-free area and let rise until dough is nearly doubled in size, about 1 hour.
TOPPING AND ASSEMBLY
Step 1
In bowl of a stand mixer fitted with whisk attachment, beat flour, powdered sugar, shortening, cocoa powder (if using), vanilla, and salt on low speed to combine. Increase speed to medium and beat until smooth and mixture looks like frosting, about 1 minute more.
Step 2
Line 2 baking sheets with parchment paper. Turn dough onto a clean work surface and divide into 12 equal pieces. Gently roll each piece into a ball and arrange on prepared baking sheets, 6 balls per sheet.
Step 3
Using damp hands, scoop about 2 heaping tablespoons of topping and pat to a roughly 3" disc. Drape disc over dough. Using damp fingers, gently smooth topping onto roll, being sure to leave about 1/4" of dough around bottom edge of topping. Repeat with remaining topping until all rolls are covered
Step 4
Dip a 4" conchas mold into flour, tapping off excess. Quickly and confidently, press mold over top of each roll, tilting so it indents most of the surface, flouring before each application. Alternately, dip a sharp knife into flour and score topping as you like. Let conchas rise until dough balls are about one-third bigger, about 1 hour.
Step 5
While conchas rise, arrange racks in upper and lower thirds of oven; preheat to 350°. Bake conchas, rotating back to front and from top to bottom halfway through, until golden and risen, 20 to 22 minutes. Transfer to a wire rack to cool.

Garlic Bread

Ingredients
4 cloves garlic, finely chopped
1/2 c. (1 stick) unsalted butter, softened
2 tbsp. chopped fresh parsley
1/2 tsp. kosher salt
1 baguette or loaf French bread, halved lengthwise
1/4 c. finely grated Parmesan

Directions

Step 1
Preheat oven to 425° and line a large baking sheet with foil. In a small bowl, mix garlic, butter, parsley, and salt until well combined.
Step 2
Liberally spread cut sides of bread with garlic butter. Sprinkle with Parmesan. Arrange on prepared sheet.
Step 3
Bake bread until toasty and golden at the edges, about 10 minutes.
