No brainer plant based 30 minute, 1 pot dinner.

This is the dish I make when I don’t know what’s for dinner but I likely have everything in the pantry handy. Protein packed and fiber full this creamy red lentil vegetable coconut curry is a favorite.

30 minutes + 1 pot veg + lentil coconut curry for 3/30 Plant Based on a Budget meal ideas. Every serving under $2 so you can start where ya are and eat well.

This is a fav dinner in heavy rotation lately–change up leafy greens as needed and enjoy plentiful fiber and flavor.

You’ll need:

* 1/2 red onion
* 2 medium carrots
* 2 - 3 stalks celery
* 4 - 5 small potatoesmedium)
* 3 large kale leaves
* 1 tbsp olive oil
* 1 tbsp water
* 1 can diced tomatoes
* 1 can full fat coconut milk 
* 1 cup water
* 1 cup red lentils
* 1/4 tsp chili flake
* 1 tsp paprika
* 1 1/2 tsp kosher salt
* 1/2 lemon, juiced
* 1 - 2 tsp toasted sesame seeds, to top (optional)

Curry aptly named here for a saucy veg dish with a variety of spices! (Curry doesn’t have to just be the traditional soupy blend.)

The only noods you should be sending.
DIY TOFU NOODLES you need to make.

Only 3 ingredients and you can prep ahead of time for dinner in a hurry. Protein packed, chewy, delicious handmade pasta goodness.

Highly recommend enjoying with my spicy peanut butter sauce. Full recipe on closedloopcooking.com | SPICY PEANUT BUTTER TOFY NOODLES WITH BOK CHOY 👀

You’ll need:
1/2 block firm tofu
220 grams semolina flour (you can sub all purpose)
5 grams kosher salt

To-do’s:
1. Open tofu, drain. Slice in half. Mash in large bowl.
2. Add flour + salt. Continue mashing until just combined.
3. Using clean hands, continue kneading mixture until a ball forms.
4. Remove from bowl. Knead 5 - 6 minutes.
5. Cover for 30 minutes.
6. Quarter sections.
7. Roll out first quarter as thin as possible, approx 1/4"" - 1/8"".
8. Slice noodles approx 1/2"" inch. Rustic is ok!
9. Separate noodles. Repeat with remaining dough quarters.
10. Drop noodles into boiling water for 3 - 4, until they float to the top.
11. Strain noodles.
12. Add to saucey goodness like these spicy peanut butter tofu noodles with bok choy. Enjoy!

SOY-SATIONAL ™ $2 Spicy peanut butter tofu noodles.
1/30 meal ideas that show you just how affordable vegan eating is.

I don’t mean tofu + noodles I mean PASTA MADE OUT OF TOFU. Not a drill folks, this is your new Plant Based on a Budget week night rotation meal. Easy to prep your dough ahead of time and drop into boiling water whenever you’re ready.

You’ll need:

The dough

210 grams firm tofu (half block)
220 grams semolina flour (you can sub all purpose flour with the same results, it will just be slightly stickier)
5 grams kosher salt

The sauce

2 tbsp olive oil
1/2 red onion
1/2 tsp kosher salt
1/2 tsp red pepper chili flakes
1 can diced tomatoes
1/3 cup peanut butter
2 tbsp soy sauce
1/4 cup water
1/4 cup pasta water
2 baby bok choy

2. Grocery drops - feed your neighbors in need with community meal trains or grocery hauls whenever possible.

3. Check out cookbooks from your local library - preserve tactility + tastier than AI slop and a signal to keep community resources funded.

4. Grow your own - victory gardens are more relevant than ever. Start small and share skills + produce starts with folks.

5. Buy less packaged food - boycott big name brands and focus on DIY replacements.

6. Eat more plants - Move the needle with more sustainable meals, find inspiration, and share with anyone who eats.
