🍝 The Ultimate Authentic Tagliatelle Carbonara! 🥓
Look at that sizzle! 🤤 There is nothing quite like a rich, perfectly glossy Carbonara straight out of the pan. The secret to this classic? Absolutely NO heavy cream! Just the magic of starchy pasta water, eggs, and cheese.
Here is how to make it perfectly every single time
👇
⏱️ Prep time: 10 mins
🥘 Cook time: 15 mins
🍽️ Servings: 2
🛒 What You Need:
200g Tagliatelle
100g Guanciale (or thick-cut bacon/pancetta), diced
2 large Egg yolks + 1 whole egg
50g Pecorino Romano, freshly grated
50g Parmesan, freshly grated
Lots of freshly cracked black pepper
👩🍳 How to Make It:
Boil the Pasta: Cook the tagliatelle in boiling salted water until al dente. (Crucial: Save a cup of that starchy pasta water before draining!)
Crisp the Meat: While the pasta cooks, fry the diced meat in your stainless steel pan over medium heat until crispy and the fat has rendered. Remove the pan from the heat.
Mix the Sauce: In a bowl, vigorously whisk together the eggs, grated cheeses, and a heavy pinch of black pepper.
Combine & Emulsify: Toss the hot, drained pasta into the pan with the meat and its oils. Pour the egg and cheese mixture over the pasta, adding a small splash of the reserved pasta water. Toss rapidly off the heat until a silky, creamy sauce wraps around every noodle!
💡 Pro Tip: NEVER add the egg mixture while the pan is over an active flame, or you will end up with scrambled eggs instead of a creamy sauce!
