There's no doubt apple and cinammon are the perfect fall combination... that's why we developed a caramel, apple and granola cookie recipe! Details below:
You'll need:
350 degree oven
Cookie sheets lined with parchment paper
Ingredients:
-1 cup softened butter
- 3 cups flour
-1 cup white sugar
- 1tsp baking soda
-1 cup brown sugar
- 1tsp cinnamon
- 2 eggs
- 1 12oz bag of h&t red tractor raisin granola
- 2 tsp vanilla
- 1 whole apple diced, no need to peel
- 1 tsp salt and sea salt for garnish
-15 (or so) caramels cut in half
Method:
1. By hand or in a stand mixer beat the butter until fluffy. add the white sugar and beat until combined,Then add the brown sugar and beat until all is combined and fluffy.
2. Add in the eggs one a time then add the vanilla. Beat thoroughly.
3. In a separate bowl combine the flour, baking soda, cinnamon and salt. mixed gently to incorporate all ingredients.
4. In two or three batches mix the flour in with the sugar/butter/egg mixture. Beat gently until all are combined.
5. Add in the granola and the diced apple and blend just until all are combined. at this point we like to refrigerate the dough but it’s not necessary.
6. Roll the dough into a log, wrap it in plastic wrap then refrigerate for at least a couple of hours.
7. When ready to bake just slice off the number of cookies you want and place them on the cookie sheet or you can simply use the spoon method onto the cookie sheet as well.
8. Press half a caramel into the middle of each cookie and gently push down (like a thumbprint cookie).
9. Sprinkle a bit of sea salt onto each caramel bit. Bake at 350 for 12-14 minutes. a dusting of cinnamon sugar when right out of the oven never hurts! Cool and enjoy!
