I’m thinking about adding Supper Starters — fresh, ready-to-mix meal kits designed to make busy days a little easier.

For our Chicken Salad Supper Starters, (tuna or pasta would work well here too) I do the prep and measuring. You simply add your own cooked chicken, mix, chill and serve.

Use rotisserie chicken, canned chicken, leftover grilled chicken or whatever you already have on hand.

Two sizes:

Small — Add 1½ cups cooked chicken
Family — Add 3 cups cooked chicken

Which flavors would you buy?

1. Classic Southern
2. Cranberry Pecan
3. Grape & Almond
4. Ranch Bacon Cheddar
5. Buffalo Ranch
6. BBQ
7. Mexican Street Corn
8. Jalapeño Popper
9. Apple Walnut
10. Peach Pecan

Who loves chicken salad?

Would you buy a just add chicken option?

All the seasonings, dressings/ sauces and some add ins (nuts, fruit and veggies, maybe some crunchy options like French fried onions) just grab a rotisserie chicken, cook up some breasts or even chicken strips mix and enjoy.

I made tamales today with a friend. These were completely from scratch. I cooked the whole chicken yesterday, made bone broth with the carcass and my freezer veggie stash and a rot carcass from the freezer, Terry had her home canned salsa verde.

It was both of our first time. I am hooked, it’s not hard, it however is a lot 😆. Now I have to wash the 11/70 bowls measuring cups and other items I used.

We made 28 chicken verde, we had quite a bit of masa left I had chicken left so I made a rojo sauce, dried chilis broth garlic and some cumin, and filled another 24. These are gluten friendly.

I plan to work on some dessert / sweet versions and maybe a cheese / poblano that I can take preorders to sell.

Who would be interested and what non meat flavors (cottage law doesn’t allow those to be sold from home and my kitchen isn’t commercial.)

I will do some number crunching and get pricing in the next couple of days.

Banana muffins with a twist. We were using up some super ripe bananas that were donated.

The recipe called for sour cream or yogurt.
We had . . . blueberry yogurt lol. It was a great lesson on substituting and what’s appropriate. These muffins were a hit and a modification worth experimenting with. I have some strawberry yogurt and freeze dried pieces to try now. Life doesn’t have to be always about following the directions.
