There’s a chill in the air, which means it’s time for the slow cooker.

It’s been a little quiet from us on here lately, but things certainly haven’t been quiet at the farm.

As we head into autumn, we’re getting towards the end of our current supply of lamb and mutton. In fact, until our next processing date in the middle of October, mutton shoulder chops are the only cut we have left.

Fortunately, they’re also particularly well suited to this time of year.

We’ve been cooking ours slowly with Guinness, onions, carrots and herbs for 7–8 hours, until the mutton is tender and the cooking liquid has turned into a rich gravy. Serve it with mashed potatoes and peas or buttered cabbage for a proper autumn dinner.

We’ve put the full recipe together here — swipe through for the ingredients and method. If you’d rather not use Guinness, you can simply substitute it with additional stock.

Mutton shoulder chops are available from Bryn Cariad Farm while our current supply lasts. Our next lamb will be available after processing in mid-October.

You may have noticed that the farm stand has been a little bare the last few days, that’s because we are prepping for the Best of Vermont Summer Festival in Ludlow VT this weekend. Stop by and see us, our booth will be right opposite the main stage and we will be fully stocked with baked goods and lamb.

In the meantime, you be pleased to know that the farm stand is restocked with welsh cakes!

We are super excited to show off our new refrigerator. Starting tomorrow (8/12) we will have refrigerated lamb available to purchase. Need something in a hurry for dinner or a bbq but don’t have time for it to defrost - we’ve got you covered.

In addition we will be adding in water and other drinks for those that need a nice cold beverage.
