Double Meat Cheese Smashburger

We were looking for something quick and easy why not go for a Smashburger

6 - 3oz meat patties
Block Cheddar Cheese sliced
Keto buns
Red onion, lettuce tomatoes
Mayonnaise
MaD All Purpose Cajun Seasoning spicy cajun seasoning

First I took the meat and put it in my hands and roll it almost like a meatball 3 oz each and got it on my cast iron and Smash down until the meat releases and then I seasoned it with the spicy Cajun seasoning and flipped it, after that was done I took the cheese and place the other meat on top and I use a small pot and covered it so the heat would melt the cheese quickly

While the cast Iron's hot I put some mayo on the buns and heated it up till it was nice and golden brown, after that just load it up how you enjoy

🔥Spicy Shrimp Tacos with Mango Salsa🔥

This is a winner times 10, Rosie and I loved it and it's a perfect summer dish to beat the Heat

Ingredients:

1 lb fresh jumbo shrimp, peeled and deveined
8 soft Zero carb flour tortillas
2 tablespoons olive oil
2 tablespoons taco seasoning
1 teaspoon cayenne pepper (adjust to taste)
1 large ripe mango, diced
¼ cup red onion, finely chopped
¼ cup fresh cilantro, chopped
1 lime, juiced
1 diced jalapeno

Optional Toppings:

Sliced avocado
Sour cream

Directions:

In a bowl, toss the shrimp with olive oil, MaD All Purpose Cajun Seasoning , cayenne pepper, until evenly coated.
Heat a large skillet over medium-high heat. Cook the shrimp for 2–3 minutes per side until pink, opaque, and slightly charred. Remove from heat.
In a separate bowl, combine diced mango, avocado, red onion, cilantro, lime juice, and a pinch of salt. Mix gently to create the mango salsa.
Warm the tortillas with olive oil and Mad Seasoning in skillet until toasted pliable.
Divide the shrimp evenly among the tortillas.
Top each taco with a generous spoonful of mango salsa.
Add more avocado, sour cream if desired.
Serve immediately with extra lime wedges on the side.

BIRTHDAY PASTALAYA

We had a great festive time yesterday at my granddaughter's birthday party, she requested pastalaya and I delivered

Most everyone here knows how to make pastalaya, it can made so many ways, with even different ingredients
So here are the ingredients
10lbs of chicken quarters that I descend and deboned which probably ended up with three or four pounds I didn't weigh it
1/2 of a Boston butt that I cubed and took a lot of the fat out probably three or four pounds
3lbs of Tramontes Meat and Seafood smoked sausage that I sliced into bite size
Six onions Chop't
2 bell peppers chop't
6 celery chop't
1 pod garlic chop't
3 - 16oz of pasta of choice
1 can rotel
192 oz homemade Chicken stock
1 tb knorr Chicken bouillon
MaD All Purpose Cajun Seasoning both original Cajun seasoning and Trinity
Little Savoie's browning sauce, I didn't measure I just poured some in
Lea and Perrins Worcestershire sauce
Louisiana hot sauce
Optional, you can put in cream of mushroom but I prefer without
I used a 12 qt Cajun Classic enameled cast iron pot

First I use the chicken bones from the chicken thighs and made half of what I needed for the chicken broth and I had two other ones in the freezer that I use

Then I browned the meat first sausage then pork lastly the chicken, and I did all three individually

I always take the meat and drain some of the oil off of it because the pork can definitely put a lot of extra oil in the pot

Next you'll want to cook the trinity after it's nice and translucent you can add the garlic

Then can of Rotel, Worcestershire sauce, hot sauce and Seasonings, then I toss in the broth cook it for about 30 minutes, at such time I will taste it to see if I had to add any extra seasonings or whatever that is missing, I didn't make it very spicy when I'm doing this for a crowd

Once the water is boiling pretty good then you can add sausage pork and pasta, bring it back to a bowl and cook it for several minutes until the pasta starts to soften add chicken close the lid and reduce the temperature down to low and it should be ready in 30 to 40 minutes, it must have been a crowd pleaser cuz they ate all of it except for a little bit yesterday for the birthday party

Blackened Ribeye with Shrimp Cocktail

Whether your keto or not it doesn't matter this will blow your freaking mind

Sous vide for two hours at 131, once done take it out dry it off, smear mayonnaise and top with MaD All Purpose Cajun Seasoning Trinity seasoning to give you that amazing crust, flakes were fairly large so I decided to put it in my coffee grinder the on the largest setting and it came out perfect, got my Cast-iron skillet very hot and seared it

Then I sous vide large 9/12 shrimp at 135, for 30 minutes, immediately take out and cold bath, and then whatever cocktail sauce you enjoy, I did a simple homemade keto ketchup, worcestershire sauce horseradish and lemon, dip and enjoy

I want to tell MaD seasoning seasonings thank you so much, you're seasonings are really amazing
