Want to can your own tomatoes this year, but don’t know where to start?

Canning is a precise process that must be done correctly to have a safe, edible product. Proper preparation ahead of time will make the entire process much easier.

Here are some simple do's and don'ts of canning...

DO:
✅Use the right equipment.
✅Use research-based recipes.
✅Invest in the right type of thermometer.
✅Check and clean all equipment parts before use.
✅Make sure all canning jars and lids are in perfect condition.

DON'T:
❌Use canning powders.
❌Use jars with wire bales and glass caps.
❌Use conventional ovens, microwaves, dishwashers, or the open-kettle method.
❌Use electric pressure cookers.

These are some of my Russian heirlooms. You can tell they are different from the other tomatoes I grow because of the shoulders and ribbing on the tomato. (The lumpy parts with lines.)

Their official Russian name is 'Tsarskiy Podarok' which I can never remember how to spell without looking it up. It translates to 'Royal Gift' in English. I have two in containers and six more in the ground. Four are just starting to produce and the other four I planted late so they aren't quite there yet. Hope of have more of these next year.
