Made PB Cup Cheesecake from for my husband’s birthday weekend. So decadent, rich and absolutely worth the work and waiting for it to chill. May have had some for breakfast.
Couple of changes from the posted recipe: 1) Used regular graham cracker crumbs for the crust, 2) added 2 tbsp PB powder to amp up flavor, 3) baked 1hr 20min and then left in the closed oven (turned off) for 1hr to prevent cracking.

Why aren’t my tomatoes ripe yet?!
Tomatoes prefer temps around 75 degrees and we are in the low 60s consistently here in Northern ME. So inside to the window they come! We planted late this year and still got lots of tomatoes, just need to let them ripen so we can make sauce and preserve for the winter!

Grilled Cheese Summer Salad - aka the most delicious and satisfying salad.
I could eat this salad every single day without complaint. It comes together in under 10 min, and is somehow fresh, crunchy, sour, salty and sweet all at once. Halloumi is really the star here - it is a grill-able sheep cheese that doesn’t completely melt, so it lends the perfect chew and saltiness. Plus, how can you go wrong with crispy cheese edges?!
Halloumi cheese, diced
Cherry tomatoes, sliced in half
Green pepper, diced
Nectarine, diced
Fresh mint and basil, chopped
Olive oil
Balsamic vinegar
Salt and pepper
Pan fry the halloumi in 1-2 tbsp olive oil over med-high heat for 4-6 mins, or until crispy. Combine all ingredients and toss with olive oil and vinegar, then top with salt and pepper.

Protein Peanut Noodle Salad🥜
Ingredients:
Soba noddles, cooked and drained
1.5 cups Cabbage, thinly sliced
1/2 Red pepper, thinly sliced
1 Carrot, julienned
1/4 cup green onions, diced
1/4 cup parsley, chopped
1/4 cup cilantro, chopped
1lb tofu, sautéed
1 cup steak, cooked and chopped

Sauce:
1 cup peanut butter
1 cup hot water
1/4 cup soy sauce
2 tbsp rice vinegar
1 tbsp sriracha
1 tbsp fresh ginger, grated
Combine sauce ingredients in a large bowl and mix until completely blended. Toss all other ingredients in sauce and enjoy. May be warmed, but best served chilled.

Protein Copycat Cosmic Brownies. Say that 3x fast.

Ingredients
3/4 cup butter
10 tbsp cocoa powder
4 eggs
1 3/4 cup sugar
2 tsp vanilla
2/3 cup flour
1/3 cup chocolate protein powder
1/2 tsp baking powder

Preheat oven to 325 degrees. Add butter and cocoa to small saucepan. Heat on low and continuously stir until butter is melted. Set aside, off heat. Stir sugar, eggs, and vanilla until well blended. Stir in chocolate mixture. Add flour, protein powder, baking powder and salt.
Spread in greased 18”x24” sheet pan/baking sheet (it’ll be thin!) and bake for 15-18 minutes. Do not overbake! Cool and top with your favorite chocolate ganache and sprinkles. Keeps best in the fridge and can be frozen.

Are you a fan of rhubarb?
We have a LARGE rhubarb plant on our lawn that came with the house, and despite absolutely no maintenance it has managed to thrive. I’ve never eaten rhubarb in anything except pie, but I’m determined to find new uses for it this summer to take advantage of our free produce!

Fun fact - I’m allergic to chicken. 😬 I generally sub for turkey, so we can still enjoy things like this Fried ‘Chicken’...
