It's been a while since we posted a recipe. This one was worthy of sharing.
You can find many of the fresh ingredients in the farm store.
Caprese' steak with balsamic glaze:
For the balsamic marinade/dressing:
1/2cup balsamic vinegar
1/2 cup extra virgin olive oil
1 tablespoon Dijon mustard
1 tablespoon of honey or maple syrup
1 large clove garlic, minced/grated
1/4 teaspoon salt
1/4 teaspoon pepper
For the steak caprese:
2 pounds flank steak or your favorite steak
2 cups cherry/grape tomatoes
1 onion
1 cup fresh mozzarella, diced
2 tablespoons basil, thinly sliced
For the marinade:
Mix everything well.
For the steak caprese:
Coat the steak in the marinade really well.
Shake off the excess marinade and grill or pan sear over medium-high heat until cooked to the desired level of doneness, about 3-5 minutes per side, before setting aside to rest for 5 minutes.
Sauté the onions and Blister the cherry tomatoes in a skillet in olive oil on the stove top at medium-high heat.)
Slice the steak thinly against the grain, top with the blistered tomatoes, sautéed onions, mozzarella, basil and garnish with fresh cucumber.
