Next up in the dehydrator is summer savory. It is peppery, pungent and earthy. The drying room smells soooo good!
This wonderful and entirely under appreciated annual herb goes with any summer vegetable, like green beans, summer squash, peppers, tomatoes and eggplants. Not to be confused with its perennial cousin, winter savory, which as you might guess, goes well with winter vegetables, like root veggies and winter storage squash.
Summer savory is also excellent with meats in marinades and rubs. Its flavor is wonderful paired with wild game, poultry and pork.
Commonly found in many European seasonings, we use summer savory in our Herbes de Provence blend and our Wild Finishing Salt.
