Next up in the dryer is spearmint and our third harvest of chamomile.
Cooling, refreshing, and so beloved. We use spearmint in a number of our teas, including Mint Medley and Lemon Mint, among others. It can also be a delightfully refreshing culinary herb--have you ever had it with lamb??
Our first bed of chamomile has given us three wonderful harvests. We will terminate that bed this week and move onto our second transplanted bed, which is just starting to bloom. Chamomile season is surprisingly long around here!

Next up in the dryer is Greek oregano. Our dehydrator is stuffed to the brim with this wonderfully aromatic and spicy flavored gem.
We use oregano in a number of our seasonings and finishing salts. A powerhouse of flavor in Mediterranean cuisine and a kitchen staple for many of us.
Oregano grows so well on the Palouse and we hope to get another harvest if time allows. After we're through harvesting it will continue to grow and eventually flower, offering a wide swath of pollinator forage and beneficial insect habitat.

Next up in the dryer are garlic scapes, for a new product this year: Garlic Scape Salt. It smells good in here!
Scapes are the curly-cue flowering stalk that appears in June on hardneck garlic varieties. Growers remove the scapes to encourage the plant to send its sugars down to the bulb forming underground. You can eat them fresh and they are DELICIOUS! But this year we're preserving these tasty morsels into a shelf-stable, delicious seasoning.
These scapes are from our earlier varieties of garlic, so we'll be making a second batch when the next flush of scapes appear.

Next up in the dehydrator is lemon balm. Its genus name, Melissa, is ancient Greek for "honeybee." If you've seen it in bloom, you might know its nectar-rich flowers attract heaps of bees! 🐝
We use lemon balm in our Lemon Mint Tea and our Tulsi Lemon Green Tea. Its flavor is bright and refreshing with notes of citrus and mint.
A relaxing nervine herb, lemon balm is thought to soothe the body's nervous system, ease anxiety and support restful sleep.

Thanks for a great market, . We will be back next weekend for one last market before our summer hiatus.

We'll spend the summer preserving all the flavors and be back at market at the start of September with all our garlic too! So come see us next week and stock up for summer!

Next up in the dehydrator is chamomile and oat straw. We grow a lovely variety of German chamomile that has an alluring aroma of fresh green apple. It's said its etymology roughly translates to "Earth apple" and it's clear why when you smell it fresh.

We will load several batches of chamomile in our dryer between now and the end of June. Which is good timing, because y'all have nearly bought us out of our chamomile containing teas!

Oat straw is one of main ingredients in our Women's Wellness tea. A subtle flavored, nutritive herb to support our bodies through the demands of life.

Next up in the dehydrator are chives blossoms, parsley and lovage. Excited to experiment with some chives blossoms this year in some very beautiful and onion-y salts.
We use lovage in our Lemon Basil Blend and Fish Finishing Salt. It's melding of parsley and celery flavors make it an excellent addition to anything fish. It's arrival is quintessential spring.
