This winter we will have a jump start on the weeds!

We’ve been going towards growing transplants to maximize our winter tunnel space. We’ll plant later generations that will be grown in grow racks in our basement, and this winter we’ll be able to grow up to 32 trays at a time to keep the new transplants covered. And new this season is landscape fabric in the paths of our transplant houses. We’re putting in the work now to get a lot of greens this winter!!

Rob and Mo Moutoux run a unique year-round, whole-diet CSA program. They grow vegetables, fruits, and herbs, milk a 100% grass-fed Jersey dairy herd, and raise 100% grass-fed beef and a pastured laying hen flock. Everything is channelled into the CSA program, where they feed 100 people the bulk of their diets year round. They incorporate animals, cover cropping, forages, and vegetable cropping to create biologically thriving, minerally-rich soils, and ultimately, nutrient dense foods. We will check out all aspects of the operation and the CSA on this interesting tour!

Feedback so far is that, like most farm tools, it is built for broad shouldered tall people (also not great for our super rocky beds…) But, we strong ass ladies and we got it done!

This is a special beer for us. It’s our first collaboration and meant to celebrate the season, the harvest, and the small farms that make local agriculture possible. Two family farms bringing value-added produce to market, individually — one a Whole Diet CSA and one a Land Beer brewery — offer you Rauch Tater, together. We partnered with Moutoux Orchard to create this Imperial Märzen made with smoked sweet potatoes, sage, and brown sugar.

Moutoux Orchard is a third generation family farm committed to sustainable, whole-diet agriculture. The Moutoux family works tirelessly to bring people the highest quality produce and provisions, with a focus on sustainable land stewardship and ethical livestock management. We are so incredibly grateful to call them neighbors, colleagues, and friends.

The name, Rauch Tater, hints at our approach to this beer. With a wink to northern Bavarian Rauchbier, which uses smoked malt for often deep smokey flavors, we opted for a subtle smoke component — more earthly than smokey— as a guidepost for the flavors to meet. Instead of smoked grain, the sustainably-grown sweet potatoes from Moutoux Orchard were smoked at our farm with local apple and cherry wood. The sweet potatoes were then put in the 100% Virginia grain mash with local sage. Once transferred to the boil kettle, we added brown sugar.

Post fermentation, the Imperial Märzen rested in oak puncheons at 35F for three months before bottle conditioning for another two months. The result is a flavorful beer with complexity from ingredients that have had time to get to know each other. Rauch Tater has a lush base from the malt and molasses sweetness from the brown sugar. The waft of smoke provides an earthy taste that connects the malt and molasses with a velvety mouthfeel from the sweet potatoes. This is capped with a savory and dry finish at the top, thanks to the sage. To us, it tastes like the holidays.

We partnered with our friends and neighbors at Moutoux Orchard to use two hundred pounds of their sustainably grown sweet potatoes in this Imperial Märzen. The sweet potatoes were smoked at our farm by Market Table Bistro over apple and cherry wood before being mixed with regional grains and local sage. It was brewed in early summer and cold conditioned in oak for three months. A limited number of bottles will be available for purchase next month.

A huge thank you to all of the farms that hosted last weekend's BFTP-only hands-on field days. It's a delight to be constantly awed by the generosity of the farmers in our network. We tested out tractors at Potomac Vegetable Farms, toured the orchard and cattle pastures and learned about CSAs at Moutoux Orchard, explored everything cut flower at Greenstone Fields, and talked about small farm equipment and marketing at Second Spring. Thanks Moutoux Orchard for hooking us up with 200 pounds of sweet potato for our first produce forward beer that we’ll be brewing this week.
