Really inventive way to use our duck fat! In Vermont you can throw a rock and hit another poultry farmer as everyone has chicken (our farm included π), but local, pasture raised USDA duck? Now that's an indulgent protein! One that we have honed and take immense pride in providing our local community and restaurants. Side note - the fat used in this recipe comes from our duck confit! One stations excess is anotherβs treasure π¦
