Did you know that although most believe that cheesecake originated in New York, it actually goes further back than that. Over 4,000 years ago in the fifth century BC, the ancient Greeks on the island of Samos created the earliest known cheesecake. This rudimentary cheesecake was made with patties of fresh cheese that were then pounded smooth with flour and honey. The creation was then baked on an earthenware griddle before being enjoyed by the masses. Back then, cheesecake was considered a great source of energy and there is evidence showing it was served to athletes during the first Olympic Games in 776 BC. Cheesecake was also popular as a wedding dessert!

Did y'all know that the Chicken Cordon Bleu likely came from a dish called veal kiev, which came about in Paris circa the late 1840s. The dish called for veal dredged in breadcrumbs and fried. It was then adapted in Moscow where veal was swapped for chicken.

Did you know that the beginning of grilling can be traced back to the 17th century when you look at the Arawak tribe of the Caribbean and South America. These people used sticks to create a flame over a fire and placed the meat on it. Imagine that 😉.

However, Smoked chicken, or meats, have been used much longer than grilling as a way to keep foods from spoiling. Research shows that smoking meat breaks down the collagen, which is why it gets so tender and delicious. For added flavor, you can brine the chicken or add seasoning. Did you know that it was Napoleon and the French government, hoping to find a more effective way to feed his troops, offered a prize of 12,000 francs to anyone who could devise such a means of preservation. Continuing with his experiments, Appert discovered that it was heat (not air) that kept pesky spoilage (caused by microbes, although he didn’t know this) at bay. This was even though the official scientific discovery of those microbes in relation to food spoilage came some 50 years later. (Thank you, Pasteur!) But Appert was correct, even if he didn’t know entirely why.

Appert’s process involved placing food inside glass jars, that were then corked, much like wine, and sealed off with a wax seal. The jars were wrapped in canvas and then boiled. He submitted his invention to the French government and was announced the winner in January of 1810, some 15 years after he first began experimenting. That same year Appert published The Art of Preserving Animal and Vegetable Substances, the first cookbook of its kind on modern food preservation.

It's Pastry time in Oni's kitchen today! Yay 😄. I don't know anyone who doesn't love a good pastry loaf. A slice of which is sooo good with a cup of coffee or hot chocolate. Or after dinner with a scoop of ice cream, oh yeah. Try my recipe for this delicious Dutch apple butter loaf👇

Did you know that apple butter can be traced back to Germany and Belgium during the Middle Ages. The practice of making apple butter was likely brought to Appalachia by the Pennsylvania Dutch, who migrated to Western North Carolina after the American Revolutionary War. Today, particularly in geographically isolated areas like Mitchell County, mountain natives continue to stew apple butter each fall as a means of preserving both their crop and their heritage.

Besides the obvious breads, pancakes, oatmeal and grits, apple butter was also served alongside fatty meats during butchering season. It was just a matter of time before they would incorporate it into their baked goods. Luckily, we don't have to make our own apple butter to enjoy this delicious loaf.
