Man! These bad boys were RIGHT! .. Everyone knows our channel is dedicated to “faith, family and food” and we normally try and do a family style meal of sorts once on the weekends. Well last Sunday, we had some of Preston Kelly Media’s friends over.. and I always ask for an honest review, good or bad, I’ll take. It. Well, one said.. “Mr Kelly, this is so good, it will almost bring you to tears!”… okay I’ll take that compliment!

🚨🔥 THE FOUR-ALARM CHICKEN MELT 🔥🚨

I had sandwich bread, bacon, pepperoni and ground chicken… so we put them all to work on the Blackstone! 😳

We mixed crispy diced bacon, pepperoni, mozzarella and seasonings right into the chicken, smashed it down on the griddle, then stacked up TWO cheesy chicken patties.

And because regular bread wasn’t going to cut it…

👉 Garlic butter + Italian seasoning
👉 Crispy toasted sandwich bread
👉 TWO loaded chicken patties
👉 MORE mozzarella
👉 Warm marinara for dipping

Basically, chicken parm met a grilled cheese and decided to answer a firehouse call. 😂🚒🔥

🏁 EASTBOUND AND DOWN… AND HEADED STRAIGHT FOR THE BLACKSTONE! 🔥

Anybody remember the movie "Smokey and the Bandit"?

Well, it just happens to be one of my all-time favorites. So when I saw "Food From a Movie" was one of the categories for this year's Great Griddle Off, I knew exactly what I wanted to make.

You know the scene…

“Gimme a Diablo Sandwich and a Dr Pepper…”

And well… you know the rest. 😂

Now, I know the movie doesn't exactly tell us what a Diablo Sandwich is supposed to be, so I decided to create "MY version".

Ground chicken smashed crispy on the Blackstone, bacon, pepper jack, crispy onions, pickles, Texas toast and a spicy Diablo remoulade.

🔥🔥🔥

But here's the funny part…

I was in such a hurry making this thing that "I FORGOT THE DIABLO SAUCE!" 🤦‍♂️😂

I guess I was trying to "make it fast” like Sheriff Justice wanted!

Thankfully, we got the sauce where it belonged before the first bite. 😎

🥜🍇 I TURNED A PB&J INTO A GUILTY PLEASURE!

The 2026 Great Griddle Off called for a guilty pleasure with a dessert twist…

So I took one of the most classic sandwiches ever and put it on the Blackstone. 🔥

PB&J Griddle Bites!

Creamy peanut butter + grape jelly stuffed inside biscuit dough, cooked golden and crispy on the Blackstone, then finished with a homemade powdered sugar glaze.

Want to take them over the top? Add a grape jelly drizzle, crushed peanuts, chocolate chips, bacon… whatever sounds good!

It's simple, nostalgic, and definitely not something I grew up eating like THIS. 😂
