Winter may be closing in, but tis best for season! Did you know hibernate for the winter? Ok, technically they don’t sleep, but with the cold water temperatures they go into energy conservation mode. This means they’ve been building up their sugar reserves, called glycogen, to make it through the winter months. It’s also the reason they taste so wonderfully sweet during the fall. Chomp away!

We had the wonderful opportunity to try ISCO’s vodka. Their process captures a unique style with using oysters in the distilling process rather than afterwards. And it really adds a nuance of salty sweet that dances on the palette.

We tried it a few ways - straight, on ice, chilled, martini, dirty martini, and yes, with . It was wonderful each way we tried, but the consensus was very chilled with oysters - a deconstructed oyster shooter - so so good. As for the oysters, east coasters with a medium to high brine worked best as the subtle sweetness of the vodka cut through the salts, but we were all thrilled with a very creamy melon west coast oyster that the vodka really accentuated.
