Yesterday, I made a cake at the request of my neighbor for her best friend’s birthday. She asked because she had my carrot cake for her own birthday. For some reason, I can’t escape making cakes for people 😂 I enjoyed making it, though, and added some gold sprinkles for a little extra flair.

This is a white cake with chocolate buttercream. The buttercream is lightly sweetened and has a small amount of espresso to enhance the chocolate flavor.

I’m trying to master just a basic roast chicken and I think I’m almost there. This was spatchcock chicken that I liberally salted in advance with diamond crystal kosher salt and let it air dry on a rack in the fridge for 24 hours. I roasted it at 425° on a bed of shallots, lemon, garlic, and herbs. It produced a perfectly seasoned chicken that needed nothing outside of a brush with butter and pepper before roasting. That salt brine changed everything!

I served it with a side of Parmesan mashed potatoes, string beans and homemade gravy from the pan drippings. Not a bad carve job either!
