After a rough few years, Stephen and Jack harvested honey last week! This year's crop has a delicious flavor that's a medium color and body.

Good news and bad news. Good news is that we have fresh honey for sale that was just harvested a few weeks ago. Bad news is that we are down from 5 to 2 colonies and one of the 2 is weak and was/is being robbed by other bees from neighboring colonies. If I can't stop the robbing that colony will be lost as well. Fingers crossed

When bees have removed the right amount of water from nectar they cap it with wax and it is officially honey. In order to harvest the honey we first have to remove the wax cappings. Here Stephen is using a hot knife to do so.

We have sold out of honey! Thank you to everyone who bought some, we truly hope you enjoy it. Hopefully next year we will be blessed an even larger harvest.

We received this recipe from the Wake County Beekeepers Association. If you try it out let us know what you think!

Sea Salt and Honey Ice Cream (no ice cream maker needed, just a mixer)

¼ cup honey

2 cups heavy whipping cream

1 (14 oz) can sweetened condensed milk

½ teaspoon salt

Whip the whipping cream in a medium sized bowl with a mixer, starting on low speed, but slowly increasing to high speed Mix for 2 minutes until the whipping cream forms stiff peaks. Gently fold in sweetened condensed milk, honey, and salt into the whipped cream. Stir until ingredients are evenly combined. Pour into a freezer-safe, airtight container and drizzle the top with an additional tablespoon of honey. Seal the container. Freeze until solid, about 6 hours. Serve and enjoy!
