…Rượu đế. (ZYEW-DAY up North, RYEW-DAY down South.) Vietnam's traditional rice spirit, made right here in California with California-grown rice.

A chemistry professor. A pot still. A whole lot of data. But this isn't Breaking Bad, it's Making Good. 😎

We use GC-MS to measure the aroma molecule by molecule: 30+ compounds behind every sip, from banana and rose to honey and toasted rice. Then we use that data to fine-tune the yeast, the cuts and the blend, perfecting a centuries-old village spirit without losing its soul.

What does rượu đế actually taste like, molecule by molecule? 🧪🥃

Rượu đế (say ZYEW-DAY up North, RYEW-DAY down South) is Vietnam's traditional rice spirit, a cousin of Korean soju and Chinese baijiu. At Dao Distillery we make it in Rancho Cordova with California-grown rice, and we wanted to understand it the way a chemist would.

So we put nine spirits through GC-MS and tracked 30+ aroma compounds in each one:
🍌 Acetate esters: banana, pear, fruit
🌹 2-Phenylethyl acetate: rose and honey
🌾 Fusel alcohols: warm, malty body
🍶 Fermentation compounds: the lactic, earthy edge of village-style rượu đế
🪵 Oak markers: vanilla and toast in our barrel-aged rice wh**ky

Then we used the data to design a blend. Too few esters tasted flat. Too many tasted sharp. Our favorite sat right in the middle, with pineapple and flowers on top of real body.

Two years ago today, Dao Distillery opened its doors as California's first rượu đế distillery. Thank you to everyone who's stopped by, raised a glass, and helped us bring this tradition to life. Here's to many more years. 🎉

🎉 Two years of California's first rượu đế distillery — and we're throwing a party to prove it.

Meet our newest release: Sweet Rice Rượu Đế. Made from nếp (sweet rice), it's the smoothest, most complex pour we've crafted yet — gentle on the way in, with a rounded sweetness and an aroma that lingers.

We're pouring it for the first time at our 2-Year Anniversary celebration, Saturday, October 17, 12–5 PM, right here at the distillery in Rancho Cordova. And we're not just handing you a glass — you're making the cocktail yourself. Step up to the bar and craft your own Umami Sour (yes, the one with fish sauce and egg white — trust us) with our team walking you through it.

Complimentary tastings, a whole roasted pig carved fresh, bánh mì heo quay, and hands-on cocktails — all included.
