Made a fresh batch of salsa roja yesterday!🌶🔥🍅 Simple ingredients, blended smooth, and perfect with a big bowl of chips. Mild heat, fresh flavor, and the kind of table salsa that disappears fast. Homemade always hits different 🔥

Ingredients:
6 roma tomatoes
2 jalapenos
1/2 bunch cilantro
1/2 white onion
4-5 garlic cloves
1/2 tbsp chicken bouillon
1/2 tsp cumin
1-2 limes - add lime juice until desired flavor reached
salt to taste
*if you want it spicy - add serranos and chili de arbol*

Roasted chicken thighs are one of my favorite things to make. I love the crispy skin and juicy meat you get from roasting them this way. It’s an easy, low-effort dinner that works any night of the week ☺️

Ingredients:
Chicken thighs - bone-in
whatever seasonings you like - I usually keep it simple with garlic, paprika, salt, black pepper, and dried Italian herbs (like rosemary & thyme)

Directions:
1. Pat each chicken thigh as dry as possible. (For even crispier skin, air-chill uncovered in the fridge overnight.)
2. Mix all desired seasonings together in a bowl, then generously season all sides of the chicken thighs - don’t forget under the skin as well.
3. Preheat the oven to 425°F
4. Evenly space the chicken thighs on a wire rack over a baking sheet.
5. Roast in the oven for ~25min.
6. Remove when skin is crispy and golden.
7. Let the chicken rest for a few minutes, then serve with your favorite sides. I usually keep it easy with green beans and mashed potatoes.
*Don’t toss those chicken drippings! Use them to make gravy. ✨️

Blackberry Jalapeno BBQ Sauce

Ingredients:
2 cups Blackberries (fresh or frozen - I used frozen)
1.5 cups Water
1/2 Lime - juiced
1/2 tbsp Apple Cider Vinegar
1/2 tbsp Worcestshire Sauce
1 large Jalapeno - sliced
8oz Brown Sugar
1/4 large Red Onion - chopped
1 tbsp Cornstarch plus 1 tbsp Water for slurry
2 tbsp unsalted Butter
Salt to taste
Fresh sliced jalapenos for serving

Directions:
1. Simmer blackberries, water, jalapeño, red onion, lime juice, apple cider vinegar, Worcestershire, and brown sugar for about 20 minutes, until the berries are broken down.
2. Let cool slightly, then blend until smooth.
3. Strain through a fine mesh sieve, then return to heat and simmer, reducing for about 15 minutes until slightly thickened.
4. Stir in cornstarch slurry and cook until glossy and thickened.
5. Remove from heat, whisk in butter, and season with salt to taste.
6. Serve with fresh sliced jalapeños.
