The first generations were farmers, and like many other "Vermonters" they grew and processed all of their food from the land they lived on. Things have changed a bit since then; remaining of what was a 1000-acre farm is 54-acres of hardwood forest. Whereas I grew up tappi

ng 800 trees, my son's helped me tap 8,500 this past season. Until 2009, a good year produced 75 gallons of syrup. Now we average more than 2,000 gallons a year. In 2012 I experimented with value-added syrups. I started with bourbon barrel aged syrup and loved it! I've expanded the line of flavored syrups since that time, but what was true then is true today. One of the best things about mixing two different industries together, maple and spirits, is the kind of people I get to meet. There's this really cool amalgamation of people in the community that visits my sugarhouse. Everyone that comes by is deeply passionate and interested in food. Meet Theona, one of Vermont’s oldest maple trees. She’s been tapped for nearly 100 years, quietly giving year after year. She’s part of the history, part of the tradition… and part of what makes this place feel like home.
