Worked on my Chili for a contest on Oct 3rd. I believe I got it right where it needs to be. A little sweet with a nice bite on the back end.

Had a great weekend for a great cause. Smoke a Boston Butt on Friday. Turned it into a delicious pulled pork dinner that was served with smoked Mac and Cheese and Missy’s Soy Smothered Green Beans.

We get to do it again next weekend.

I donated the dinner for Mikey Says Cancer Sucks benefit auction. Two amazing ladies ended up having a nice bidding war. So Missy and I decided to do two dinners if the other matched the winning bid. We were able to raise $500 for Mike Austin.

We will be trying something new tomorrow at Toby’s Smokehouse.

Going to try a little experiment on one of the Pork Butts we will be smoking. Going to add some taco seasoning to our homemade rub, and to our Kosmo Q Pork Injection.

We will be doing Pulled Pork Nachos for an event on Saturday. Also going to me doing a Smoked Queso for the first time.

Can’t wait to see how it turns out.

The Spam turned out great, or so I been told. The Masubi marinade was a huge hit, along with the burnt ends.
