Pilsudski Deviled Eggs
Makes: 12 deviled egg halves (6 servings)
Ingredients
* 6 large eggs
* 3 tablespoons mayonnaise
* 1½ teaspoons Pilsudski mustard (pick your flavor) we use Dill Pickle
* 1 teaspoon white vinegar or fresh lemon juice
* ¼ teaspoon kosher salt
* â…› teaspoon freshly ground black pepper
* 1 tablespoon finely chopped chives (optional)
For garnish:
* Smoked or sweet paprika
* Extra chopped chives or fresh dill
* Freshly cracked black pepper (optional)
Instructions
1. Place the eggs in a saucepan and cover with cold water by about 1 inch.
2. Bring the water to a boil, then cover the pan, remove it from the heat, and let the eggs sit for 10–12 minutes.
3. Transfer the eggs to an ice bath for 5–10 minutes, then peel.
4. Slice each egg in half lengthwise and carefully remove the yolks.
5. In a bowl, mash the yolks until smooth. Stir in the mayonnaise, Pilsudski mustard, vinegar (or lemon juice), salt, pepper, and chives if using. Mix until creamy.
6. Taste and adjust the seasoning. Add a little more mustard if you’d like a stronger mustard flavor, or a bit more mayonnaise if the filling is thicker than you prefer.
