Vegan Edamame Spaghetti Bolognese 😋

Ingredients:
• 1 box Explore Cuisine Organic Edamame Spaghetti
• 1 lb raw unsalted cashews, soaked and blended (they won’t fully smooth out and that’s the texture magic)
• 5-6 cloves garlic, chopped
• 1 medium or 1/2 large yellow onion, chopped
• 8 oz baby bella mushrooms
• 29 oz Roma tomato purée (about 10–12 Roma tomatoes)
• 2 tbsp granulated sugar to balance the acidity
• A couple shakes of Tabasco
• Salt to taste

Who said fall comfort food couldn’t be high protein? 💪

Ingredients:
227 g Explore Cuisine Red Lentil Penne
2 tbsp olive oil
¼ medium onion, finely chopped
2 garlic cloves, minced
1 tsp red chili flakes
2 tbsp tomato paste
120 ml (½ cup) heavy cream
60 g (½ cup) finely grated Parmigiano Reggiano
1½ tbsp (21 g) butter
1 tsp Italian seasoning (rosemary, basil, oregano, thyme)
Salt & pepper to taste
A splash of reserved pasta water
Fresh basil for garnish (optional)

Directions:
Cook pasta in salted boiling water (7–8 min). Reserve ½ cup pasta water.
In a pan, sauté onion + garlic in olive oil until golden.
Add tomato paste, cook 2 min.
Lower heat, add heavy cream + seasonings. Stir until creamy.
Toss in pasta, splash of pasta water if needed.
Add cheese + butter, mix until smooth.
Serve hot, garnish with basil + extra cheese.
👉 Perfect balance of flavor + protein. Save this for your next pasta night! 🌱💪

Protein pasta but make it pizza… okay!

Ingredients:
1 box organic red lentil penne (cooked al dente)
pizza sauce
shredded mozzarella cheese
vegan pepperoni slices
Italian seasoning
grated parmesan cheese

Instructions:
Slide cooked pasta onto water-soaked skewers to form a
“bed” then cover with layer of sauce, cheese, pepperoni, and Italian seasoning. Bake on a parchment-lined baking sheet at 400° for 8-10 minutes and sprinkle with parmesan cheese.
Serve with extra pizza sauce for dipping and enjoy!
