Look what we found in our popcorn!🌽
Huitlacoche (pronounced roughly wee-tlah-KOH-cheh) is a fungus that grows on corn plants.
Its scientific name is Ustilago maydis.
Instead of producing normal kernels, the fungus causes large, swollen, grayish-black galls to form on the ears, kernels, and other parts of the plant.
In Mexico, huitlacoche has been eaten for centuries and is considered a delicacy.
It has a unique flavor often described as earthy, savory, mushroom-like, and slightly smoky.
Huitlacoche is commonly cooked into tacos, quesadillas, soups, sauces, and egg dishes.
The fungus replaces the corn kernels with masses of spores. When mature, the galls become dark because they're filled with spores.
