We've got a confession.

When we bring hot pasties and folds to events, they taste really, really good. We're proud of what comes out of our oven.

But...

We know they're not quite the same as the moment they come out of your oven.

That first bake is where the magic happens. The crisp, flaky crust. The golden edges that shatter just a little with every bite. The contrast between that buttery crust and the hot filling inside. To us, that's not just part of the experience—it is the experience.

We know not everyone obsesses over crust the way we do. Around here, that crispy, flaky bite is part of what makes an EmberFold and EmberFold. More than anything, we want you to experience it exactly as we intended.

If you've been following along, you've probably noticed we spend a lot of time thinking out loud.

Not every idea we share becomes a fold. Some sound better in our heads than they do in a crust. Some need a little more work. And some... well, they're probably best left on the drawing board.

And sometimes, we simply have bigger plans than the hours we have in the kitchen.

If you see us talk about an idea that doesn't make it to the menu, don't think of it as a failure. Think of it as proof that our dreams are usually a little bigger than our schedule. We'd rather dream big and build thoughtfully than rush something that isn't ready.

But sharing those ideas is part of the fun.

Some of our best creations have gotten better because of something one of you said. A different ingredient. A better name. A question we hadn't considered. That kind of feedback matters.

So keep it coming.

When we toss out a wild idea or ask what you think, we're not just making conversation—we're inviting you into the creative process. EmberFold is built one fold at a time, and we're glad you're dreaming alongside us.

It’s official.

Our newest folded creation has a name.

Originally we called it the Carolina Smokehouse, but the more we tasted it, the more we realized it wasn’t just inspired by one region. It borrows the best flavors from across the South, so it deserved a new name.

Introducing the BBQ Fusion Fold.

Pulled pork, roasted poblano peppers, sweet corn, pickled red onions, smoked Gouda, and our signature Alabama white BBQ sauce—all folded into our buttery crust.

We loved it straight from the oven.

Then we dipped it in the Alabama white sauce.

That’s the moment it all came together.

The BBQ Fusion Fold makes its debut this Saturday, July 11, at both of our pop-ups:
