Good Beer Takes Time
For years in my spare time I would brew beer at home (wifey was very patient with how I took over the kitchen while cook'n the grains)! After numerous batches of beer (usually hoppy IPA's) I was trimming the landscaping out in front of our home when I came upon our rosemary bush (I remembered Mom used rosemary as an herb when frying chicken) so I decided to add rosemary to my next IPA and wow...it turned out great! My brother Danny (owns a beverage distribution company RSRB) said I should brew commercially...I said "naw...I have no idea where even to start with that"...he said what have you got to lose to try...I said to do that I'd need a place far away for all the brewing equipment needed, etc and he said "no...there's a much easier way to do it" and her turned me onto a company which sells very efficient micro-beer brewing equipment...so after I saw how all that worked I had to come up with a location that made sense for brew tanks and right around that time I was managing a building where a very tall vertical storage space that was originally designed to be an elevator shaft was vacant space so I thought...hmmm...if I'm going to do this then this is the right place for it! I got an architect I've known for years to look at it...she said it could totally be done so she designed plans, we submitted to the city and after some back-and-forth/corrections, etc the plans were approved! It took a while to build it out, get the equipment installed, etc but we got it done! Ohhhh...and when trying to come up with a name for the brewery it popped into my head...well...we're brewing in an elevator shaft...hence the name Shaft Brewery made perfect sense, right? Lots of folks also like calling it Shaft Brew so we got a DBA for both names! Ohhh...and after we got signed off by the city and ABC I then learned we needed to get our labels approved by the TTB's COLA department...we applied for that but then the government shutdown occurred which delayed approvals for about 3 months...but as of last month we were 100% approved by all the various departments and since Chez Melange has been at our side all along I made sure they were the FIRST to get a keg! Also this last week The Slip Bar and Eatery ordered a keg for their Monday karaoke night and we have another local spot going for one too! If you like the taste of rosemary then I'm sure you'll like our Shaft Brew Rosemary IPA...keep in mind that the Rosemary is the dominating herb so even though we brewed it hoppy as well that you'll primarily taste the Rosemary! Ohhh...last thing...we're applying for our Shaft Brewery beer tasting room; if we get the approvals then you'll be able to drive/park 4 floors underground to Shaft Brewery at the bottom of the parking garage in the elevator shaft and taste some beers but that is likely 4-6 months away so just order a Rosemary IPA at Chez Melange while enjoying one of their incredible meals! The Rosemary IPA goes really well with their Sea Change menu 📷:)
