Spring is here in full bloom!

We know that because pollen’s filling the air, allergies are back and more importantly, the weather’s warming up!

Time for soft serve ice cream! 🍦

And not just any soft serve, but possibly the best soft serve ice cream you’ll ever have. The secret lies in its super smooth texture which is way more dense and creamier than other soft serve because there’s hardly any air incorporated in the freezing process.

Some call it ice cream. Founder Alexis LeCount calls it frozen custard - because it’s special - it’s made with eggs in addition to cream and sugar. And not just that, Alexis uses only high quality organic Straus dairy to create that pure, fresh flavor that must be experienced.

Loyal customers and Yelpers who stand in long lines outside her mobile truck which can usually be found in the East Bay from Oakland to Berkeley, El Cerrito, Orinda and San Ramon say Lexie’s frozen custard is “the real deal and a little extra”. I think that’s ‘nuff said. You’ll just have to try it for yourself.

Every country or city has a nationally beloved bread. Think French croissants, San Francisco sourdough, and Italian focaccia.

Now introducing… pandesal, the quintessential bread roll of the Philippines.

Pandesal is the Spanish term for “salt and bread”, having its origin from the Spanish colonial era of the 16th century. Most bakeries all over the country, from small backyard establishments to industrial bakeries, produce and sell this bread.

They look very similar to American dinner rolls, except the pandesal is served pretty much anytime of the day except during dinner.

It is a classic breakfast or midday snack, best served warm fresh out of the oven.

It is slightly sweet, soft and fluffy, dusted with bread crumbs and tastes amazing with salty cheese.

We are delighted to have Chef D from Azucal Kitchen in San Jose extend her Filipino hospitality to us in the Bay Area with not just the classic pandesal but also moringa and ube cheese!

The very first time I sank my teeth into a banana cream pie from Mission Pie in San Francisco, I thought it was the most incredulous thing I've ever had.

The silky smooth cream smearing my upper lip, the buttery, flaky crust undergirding the pie, the heavenly intertwine of cream, coconut and butter mish-mash in the mouth almost tricked me into believing this is heaven on earth.

We're proud to announce that 43&Co, a local boutique bakery in Milpitas, created by a Malaysian pastry chef who has worked in Tartine in San Francisco, is offering a great assortment of cream pies, fruit tarts and oh, gluten free chocolate cake. 🧁🍰

Did you know that frozen seafood makes up 90% of the seafood demand? This means that the demand for live seafood is a mere 10% of the overall seafood demand.

I learnt this fact from our local home grown sea urchin and shellfish diver, Cyrus Phan.

I’m a little gobsmacked, to be honest. Given a choice between live and frozen seafood, I’d imagine live is the best way forward! Straight from the ocean to your table! 🐠 🦀

And the fact that someone would dive and catch crabs, sea urchins, turban snails, and sea cucumbers from our very own Californian coast and deliver these same-day caught live seafood blows my mind. 🐡

What’s the closest gap between French and Brazilian baking?

For the French, it’s gougère, and for the Brazilians, it’s pão de queijo.

On the outside, they look similar - small golden cheese balls with a crunchy crust and a light, fluffy centre.

Upon closer inspection, the French gougère is made with wheat flour while the Brazilian pão de queijo is made with cassava flour and thus, is naturally gluten free.

The gougère is made with bold and salty cheese like gruyere while the pão de queijo is best made with aged parmesan cheese.

The gougère is commonly served as appetizers and compliments a nice glass of bubbly champagne.

You’ll find pão de queijo at almost every Brazilian gathering. It is available around-the-clock and often sold in bars because they are addictive, crowd-pleasing bites. They are best eaten at breakfast, fresh from the oven and washed down with a cup of Brazilian coffee.

Being a cyclist myself, this pastry is one near and dear to my heart.

The Paris-Brest (pronounced “pah-ree-breast”) is a classic French pastry, featuring a crisp, almond-studded baked ring of pâte à choux (a delicate pastry dough) that is split in half horizontally, liberally filled with praline crème mousseline - a heady mixture of vanilla pastry cream, nutty praline paste, and whipped butter - and finished with a dusting of powdered sugar.

This gorgeous dessert was created in 1910 by pastry chef Louis Durand as a homage to the long-distance Paris-Brest-Paris bicycle race (the pastry’s circular shape is meant to evoke that of a bicycle wheel). Pâtisserie Durand, which is still owned and operated by the Durand family, claims to have the original recipe, but fortunately this hasn’t prevented pastry chefs around the world from putting forth their own spins on the dessert.

Regardless of the numerous creative interpretations and modern takes on this classic recipe, the perfect Paris-Brest should always be dominated by the toasted nutty flavor and aroma of praline cream.

And this, my friends, by local Bay Area French baker, Paul de Feybeese, hits all the right shapes, flavor and spots of the perfectly rounded and crunchfully delightful Paris-Brest.
