Strawberry-Rhubarb Cheesecake Bars ...
1 1/4 cups packed light brown sugar
3/4 cup butter, at room temp
4 eggs
2 Tbs. Vanilla extract
3 cups + 2 Tbs. all-purpose flour
3/4 tsp. baking powder
2 (8oz) package cream cheese, at room temp
1 (14 oz) can sweetened condensed milk
1 lb. trimmed fresh rhubarb, cut into 1/2" pieces
2 cups strawberries, trimmed, quartered
1/4 cup granulated sugar

○ Heat oven to 350°
Line 13" x 9" baking pan with enough foil to overhang long sides by 2"; coat with cooking spray. On medium speed, beat brown sugar and butter until creamy, 2 minutes. Add 1 egg and one tablespoon vanilla; beat until blended. On low speed beat in 3 cups flour and baking powder. Reserve 1/4 of dough; press remaining dough into bottom of pan.

○ On medium speed, beat cream cheese and milk until smooth; beat in remaining eggs and vanilla. Spread in pan. Bake until firm, about 30 minutes. Combine fruit, granulated sugar and remaining flour; spread over filling. Crumble reserved dough over fruit. Bake until golden brown and fruit is tender, 35 - 45 minutes. Let cool completely on rack.

Your public service announcement for today:

The recent FB update added this ⬇️ new feature for mobile FB users. Since this update - many of my friends have landed in FB jail (yes, that’s a real place and there’s no fair trial or bail out options! 🤦‍♀️). It seems many of us are accidentally ‘reporting a problem’ and getting our friends thrown in jail. 😲

How can you fix it? 🤔
When you’re in FB, shake your phone (literally shake it) around until this shows up. Then slide that ‘shake phone to report a problem’ button to OFF! It’s CRAZY that none of us knew this had been added and that it was automatically ON with the update. 🤷‍♀️

Fix your phones - Let’s keep our friends out of FB jail! 🚨🚔

Strawberry banana French toast
makes 2 servings
inspired by IHOP
1 cup sliced fresh strawberries
2 teaspoons sugar
2 eggs
1/2 cup of milk
3 tablespoons all-purpose flour
1 teaspoon vanilla
1/8 teaspoon salt
1 tbsp butter
4 slices (1 inch thick) egg bread or country bread
1 banana cut into 1/4 inch slices Whipped cream and powdered sugar (optional)
Maple syrup

1. combined strawberries and sugar in a small bowl; toss to coat.
Set aside while preparing French toast
2. Whisk eggs, milk, flour, vanilla, and salt in a shallow bowl or pie plate until well blended. Melt 1/2 tablepoon butter in large skillet over medium-high heat. Working with two slices at a time, dip bread in egg mixture, turning to coat completely; let excess drip off. Add to skillet; cook 3 to 4 minutes per side or until golden brown. Repeat with remaining butter and bread slices.
3. Top each serving with strawberry mixture and banana slices. Garnish with whipped cream and powdered sugar; serve with maple syrup

EASTER STORY COOKIES
You need:
1 c. shelled whole pecans
1 tsp. vinegar
3 egg whites
pinch salt
1 c. sugar
zipper baggie
wooden spoon
tape
Bible

Preheat oven to 300 F.

Place pecans in zipper baggie. Let children beat them with the wooden spoon to break into small pieces. Explain that after Jesus was arrested he was beaten by the Roman soldiers. Read John 19:1-3.

Let each child smell the vinegar. Put 1 tsp. vinegar into mixing bowl. Explain that when Jesus was thirsty on the cross he was given vinegar to drink. Read John 19:28-30.

Add egg whites to vinegar. Eggs represent life. Explain that Jesus gave His life to give us life. Read John 10:10-11.

Sprinkle a little salt into each child's hand. Let them taste it and brush the rest into the bowl. Explain that this represents the salty tears shed by Jesus' followers, and the bitterness of our own sin. Read Luke23:27.
So far the ingredients are not very appetizing.

Add 1 c. sugar. Explain that the sweetest part of the story is that Jesus died because He loves us. He wants us to know and belong to Him. Read Psalms 34:8 and John 3:16.

Beat with a mixer on high speed for 12 to 15 minutes until stiff peaks are formed. Explain that the color white represents the purity in God's eyes of those whose sins have been cleansed by Jesus. Read Isa.1:18 and John 3:1-3.
Fold in broken nuts. Drop by teaspoons onto wax paper covered cookie sheet. Explain that each mound represents the rocky tomb where Jesus' body was laid. Read Matt. 27:57-60.

Put the cookie sheet in the oven, close the door and turn the oven OFF.
Give each child a piece of tape and seal the oven door. Explain that Jesus' tomb was sealed. Read Matt. 27:65-66.

GO TO BED! Explain that they may feel sad to leave the cookies in the oven over night. Jesus' followers were in despair when the tomb was sealed. Read John 16:20 and 22.

On Easter morning, open the oven and give everyone a cookie. Notice the cracked surface and take a bite. The cookies are hollow! On the first Easter Jesus' followers were amazed to find the tomb open and empty. Read Matt. 28:1-9.
