Great insite about your take home beef!
Where is the beef?????
I had a LOT of comments yesterday and many good questions about all the things that go into buying beef, direct. And while I try to go through my educational posts with a fine tooth comb, it’s inevitable that I confuse some, anger others, or even be accused of being misleading. That would not ever be my intent.
So let me state what I thought was obvious.
1. He weighs 1530 lbs but you don’t get that many pounds of beef for your freezer.
2. He isn’t all “steaks and roasts.”
Once he is slaughtered his head, legs,
tail, and hide comes off. His entrails are removed and blood drained. He goes up on a hook and is weighed as a “hot carcass.” He just went from 1530 to 900 pounds. His other parts become rendered as recyclable or beef by products. I am currently waiting on a hide removed last year, that is being cured and will become a rug for our home!
Then he will hang and chill. He will lose additional moisture as he chills, maybe another 2%~5%. This process is important for taste and texture.
Then, it’s time to cut! There is fat to trim, bones to remove, and selections to make. If you don’t love Tbones, they have to be cut to different steak selections. You may want really lean ground beef. Overall, you can expect to get about 60% of what he was, on the hook.
So while the living, breathing, animal weighed 1500 lbs, what actually is wrapped and placed in your freezer is closer to 550 lbs, give or take.
Let me repeat, again, that this is not all black and white. For instance, some breeds of cattle have a heavier hide than others, or bigger legs. This impacts your “weight.”
And yes, that is still a lot of beef, and it will require a big freezer!!!!
This will include steaks, roasts, ground beef, and more. Again, this will look like meals for a family of 5, eating beef several times a week.
Now your investment looks more like $9-$10 a pound. Sounds expensive, right?
But that includes your ribeye, chuck, sirloin, ground beef, short ribs, Soup bones, New York strip, fajita meat, and more.
Only you can decide how to spend your hard earned funds. Only you can decide how to save your money and write a really big check, or buy a freezer.
