We have been busy!

This seasons numbers so far:

Sap collected = 4,160 gallons
Syrup bottled = a little over 57 gallons
Sap currently in tanks to process = 960 gallons
Average sugar content has been at 2.
Previous year best was 52 gallons.
Goal we set for 2026 was 60 gallons.

Projected gallons as long as we can processes all the sap before it spoils is 96 gallons!!

We need a night shift or larger evaporator. 😄

While I love the warmer weather, it isn't good for the maple syrup hobby. If the trees start to bud from the warmer weather we pull the taps and stop collecting sap. Hopefully the weather drops back down below freezing in time and we are able to gather more sap to make syrup. We have only produced 21 gallons of syrup so far this year, would love to hit 50 to 60 gallons.

Ryan spends his entire weekends processing sap during the syrup season. Saturday he didn't eat until late evening, thankfully his mom prepared a meal for us all.

Sunday morning I prepared pancake batter, grabbed a cast iron skillet, butter and paper plates and we had pancakes while watching sap boil.

420 gallons of sap gathered yesterday and we have some full bags again today. Some troubles with the tractor have us behind schedule. Thankfully one of the Ames brothers has a tractor, we are in the process of getting that over to our place.

Last Sunday we bottled a little over 7 gallons of syrup. The weather has been below freezing all week so the sap hasn't been running. We need it to warm up during the daytime hours and drop back to freezing at night. Normally our season runs until the second week of April. The first batch was a beautiful color of syrup and taste amazing!
We are waiting on our new custom printed labels to arrive. I had a very generous label manufacturer offer me labels in exchange for a couple bottles of syrup!

Filling the wood burning evaporator is by far my least favorite task in the process. This has to be done about every 30 minutes and boy is it hot!

Maple Cookies with Maple Icing

Ingredients:

For the Maple Cookies:
- ½ cup unsalted butter, softened to room temperature
- ¾ cup packed light brown sugar
- ¼ cup pure maple syrup
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
- 1 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon cream of tartar (for softness)
- ½ teaspoon fine salt

For the Maple Icing:
- 1 ½ cups powdered sugar, sifted
- 3 tablespoons pure maple syrup
- 1 tablespoon unsalted butter, very soft
- ¼ teaspoon maple extract (optional, for extra flavor)
- 1-2 tablespoons heavy cream or whole milk, as needed

Directions:

1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a large bowl, cream the softened butter and light brown sugar together until light and fluffy.
3. Beat in the maple syrup, egg, and vanilla extract until well combined.
4. In a separate bowl, whisk together the all-purpose flour, baking soda, cream of tartar, and salt.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Scoop dough by tablespoonfuls onto the prepared baking sheets, spacing them about 2 inches apart.
7. Bake for 10-12 minutes, or until the edges are lightly golden.
8. Remove cookies from oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
9. To make the maple icing, combine powdered sugar, maple syrup, softened butter, and maple extract in a bowl.
10. Add heavy cream or whole milk one tablespoon at a time until the desired consistency is reached.
11. Once cookies are completely cooled, spread or pipe the maple icing on top.
12. Allow icing to set before serving.

Prep Time: 15 minutes | Cooking Time: 12 minutes | Total Time: 27 minutes

Kcal: 180 kcal (per cookie, approx.) | Servings: 24 cookies

Tips:
Chill the cookie dough for 30 minutes before baking to prevent spreading and enhance texture.
Use a piping bag for a neat and decorative icing finish on the cookies.
